Yong Tou Fu (Stuffed Vegetables and Tofu)





These stuffed vegetable/toufu... has a very interesting name... whatever you choose to stuff... its called "Yong Tou Fu" (Literally means Stuffed Tofu) ! 


And you could stuff basically any vegetables or bean curd products that you could think of....

Ingredients:
2 Firm tofu (halve and slit length wise in the middle to make a pocket)
2 Brinjal (Cut into 2 inches in length, slit in middle, make sure not to cut too deep that it breaks)
6 Green Chilli (Cow Horn chilli or Hot Banana, slit in the middle, remove seeds)
6 Okra(slit in the middle)
6 mushroom (remove stems)


Stuffing:
300 gm Spanish Mackerel or Tilapia meat
100 gm minced turkey(or minced pork)
1 tbsp of chopped coriander leaves
1 tbsp of chopped spring onion


Seasoning:
2/3 tsp Salt
1/2 tsp Sugar
1 tbsp Corn Starch
1 tbsp Light Soy Sauce
1 tbsp Vegetable oil
1/2 tsp Sesame oil
A pinch of pepper powder


For Gravy:
1 tbsp Oyster Sauce
1 tsp Cooking wine
1/3 cup of Water
1 tsp Sugar
Few drops of sesame oil
1 tsp corn starch







In a chopper, blend fish meat into paste, you could use a butcher knife to do the job too!


In a stand mixer, empty the fish paste into mixing bowl, beat it at level 2 for 5 minutes until the paste become sticky.  Add minced meat/turkey, continue beating for 5 minutes, add chopped coriander and spring onion, all seasoning, mix well.


Note:If you do not have a Stand Mixer,you could use hand to do the beating job until the fish paste become sticky.


酿辣椒

Stuff the paste carefully into all vegetables and tofu, rub some cold water on the surface, it will smooth the stuffing surface.


Heat up some oil in a cooking pan, shallow/or deep fry the stuffed vegetables and tofu, stuffing face down first, this will help to prevent stuffing breakout from the vegetables/tofu. 

You could also steam the veges if you prefer healthier version.


In a sauce pan, bring all the ingredients beside corn starch under gravy to boil, mix 2-3 tbsp of water with corn starch, and pour it into the gravy to make a thick gravy. Pour gravy over to stuffed vegetables/tofu. Garnish with some chopped Spring onion.

Note:You could also make this dish into soup, bring a pot of chicken/pork stock to boil, add cooked stuffed veges/tofu pieces into soup, season with salt, fish sauce and pepper powder, garnish with chopped coriander leaves and spring onion.
