Matar Paneer (Indian Cottage Cheese with Green Peas) 【豌豆奶豆腐 】



今天介绍的这道菜是印度的奶豆腐煮豌豆,这个奶豆腐(Paneer)的制作方法和蒙古的“苏恩呼日德”相似,也很接近云南的奶饼。口感吃起来柔软,有浓厚的奶香味。

奶豆腐是印度素食里一个不可或缺的食材,是婚宴节庆的珍贵食物。奶豆腐的营养价值和一般的奶酪相似,这我就不多啰嗦了。

我偶尔也会在家里自制奶豆腐,但是工序比较麻烦,现在商店里都可以买到很好的Paneer,所以我就不再自己鼓捣了。。

Paneer is a well loved cooking ingredient in many indian families, cooking with green peas is one of the most common way to use paneer.

Making this dish with homemade paneer will taste even better!


材料:
1/2 块 牛奶豆腐
1 杯冻豌豆
2 只中型番茄
1/2 只洋葱
2 只朝天椒或小青椒
1 小勺 姜蒜蓉
1 寸 桂皮 (Cinnamon Stick)
3 只 丁香
1/4 杯 酸奶 Optional

调味料:
2 小勺 芫荽粉 (Coriander Powder)
2 小勺 番茄酱 (Ketchup)
1 小勺 孜然 (Cumin Seed)
1 小勺 孜然粉 (Cumin Powder)
1 小勺 辣椒粉 (Chili Powder)
1 小勺 姜黄粉 (Turmeric Powder)
1/2 小勺 印度五香粉 (Garam Masala)
1 小勺 或适量盐

Ingredients: 
1/2 piece of paneer (around 200 gms)
1 Cup of frozen peas
2 Medium size tomato
1/2 Bombay Onion
2 green chilies
1 tsp Ginger garlic paste
1 inch of Cinnamon Stick
3 cloves
1/4 cup plain yogurt   Optional

Seasoning:
2 tsp Coriander Powder
2 tsp Ketchup
1 tsp Cumin Seed
1 tsp Cumin Powder
1 tsp Chili Powder
1 tsp Turmeric Powder
1/2 tsp Garam Masala
1 tsp salt or to taste




1. 把番茄,洋葱,姜蒜蓉,辣椒和洋葱搅拌成糊状。

2. 把奶豆腐切块,两面稍微煎黄。

3. 另外一口锅里加入2大匙的食油把丁香,桂皮和孜然加入煸炒香。

4. 把番茄糊倒入煮干至边上稍微泛出红油。这个时候加入除了Garam masala和番茄酱之外的所有调味料。

5. 把材料煸炒匀后把酸奶和1杯水混合,倒入锅内煮滚。加入奶豆腐稍微煮2分钟,加入Garam masala和番茄酱。继续烹煮3-5分钟后加入豌豆,即可熄火,加盖稍微虚焖几分钟再上桌。

好吃的Matar Paneer,可以配面饼也可以配米饭吃。

1. Blend together tomato, onion, ginger garlic paste and chilies to form a paste.

2. Brown paneer pieces (cute in1 cm cubes) set aside.

3. In another cooking pan, add 2 tbsp of cooking oil with cloves, cinnamon stick and cumin seeds, cook until fragrance.

4. Pour in the tomato onion paste, cook until oil separated at the edge.

5  Add most of the spices but garam masala and ketchup and cook for 2 minutes.

6. Mix the yogurt with 1 cup of water, pour into the pot and bring to boil.

7. Add paneer pieces, and cook for 2-3 minutes, add Garam masala and ketchup as seasoning. Continue cooking for 3-5 minutes, and add frozen peas before switching off the fire, cover the pot with lid and wait for few minutes before serving.

It goes well with chapatis and rice.
