【豆角茄子】Eggplant Long Bean Stir-Fry



豆角炒茄子是娘家经常做的一道菜,送粥下饭都非常美味,是茄子和豇豆/豆角盛产的时候常做的一道菜。

我喜欢用马来西亚产的豆瓣酱做这道菜,是我思念的家乡味,也没那么咸。

Stir-fried eggplant with long beans is a dish my mom made a lot when I was young, It goes well  porridge and rice. 

A dish I made often now when eggplants and long beans are in the market during summer.

【紫薯燕麦粥】Purple Sweet Potato Oatmeal

燕麦除了拿来做芋头燕麦粥燕麦玛芬燕麦曲奇以外,拿来做这款紫薯燕麦做早餐也非常好吃,加了紫薯的燕麦粥颜值真的太棒了。

In addition to making oatmeal for breakfast, old fashioned oats can also be used to make oatmeal muffins and oatmeal cookies.

Oats are also very delicious when make into Chinese sweet soup/dessert. Adding purple sweet potato gives the dish a very vibrant color, not to mentioned the rich nutrients that comes with it.

【乳酸菌气泡水】Yakult Soda/Sparkling Water

 

儿子很喜欢喝乳酸菌饮料,我很喜欢喝气泡水,这个夏天我们发现了一个娘俩都爱的喝法,就是把乳酸菌饮料和气泡水混合了加冰块喝,真是太棒了!

My son A likes Yakult drink, and I like sparkling water. This summer we found a way to enjoy what we like at once!

We mix Yakult drinks and sparkling water together and add ice cubes to it. It’s really yummy!

【印式香辣油饼】Masala Poori (Fried spiced Flat bread )

 

土豆咖喱/马萨拉是印度街边摊卖油饼的标配。是很多人乘搭长途火车或巴士时休息站必点的点心。也是我家LD和儿子非常喜欢的一道小吃。

搬到美国后我鲜少炸东西,前几天是俊爹生日,就做了这个他喜欢的香辣油饼给他庆生,就连俊宝都吃了好多呢!

Poori was the very first Indian bread that caught my attention and fancy, it was from there that I venture into making different types of Indian Rotis and Parathas.

The potato curry that I made today is the standard serving with Puri in roadside stalls in India, it is also something I make for hubby's birthday every year. 

This year on his birthday, instead of making the plain puris, I have made a variation of it with spices, it turned out really well and tasty.

Diwali Countdown - Gobi Mussallam 【莫卧儿烤全花椰菜】

 

Gobi Musallam is a derivation from the very famous Mughlai dish Chicken Musallam, the chicken is marinated and stuffed with eggs and can be served dry or with gravy. 'Musallam' means whole in Hindi, therefore, just as a whole chicken is cooked in Chicken Musallam, so is the Gobi Musallam. 

The gobi will first be roasted and topped with creamy gravy before baking again, it is a very appealing and tasty dish. Good for party and celebrations!

莫卧儿烤花菜【Gobi Musallam】 源于一道著名的莫卧儿王朝菜,【莫卧儿烤全鸡】- Chicken Musallam,这道烤全鸡是把鸡肉用香料腌制后进行烤制,非常的美味,有的食谱还会在鸡肚里塞上几颗水煮蛋一起烤制,也很美味。 

“Musallam”在印地语里是“整”的意思。所以这道菜做成素食的话,用了整头的花菜代替鸡肉烹制,烤花菜的成品卖相好,看起来非常大气,是个适合聚餐和节庆的美食!

Maggie Goreng 【炒快熟面】


I used to like Mee Goreng Mamak more than this Maggie Goreng, as I stay longer overseas, where fresh oil noodle is hard to come by, Maggie goreng becomes a quick and favorable choice.

I could stir up this hearty meal under 20 minutes provided all the ingredients needed are in place (Which I always do). Seriously, what is not to love about this tweaked instant noodle?

以前其实我喜欢嘛嘛档炒面更胜于这个炒快熟面。然而海外待的时间更长了之后,炒快熟面就成了一个快捷又便利的选择。

只需所有原料都准备好,就可以在 20 分钟内炒出这个美味的炒面,真的太方便了。

【燕麦芋头甜汤】Taro Oatmeal

 

燕麦除了拿来做燕麦粥,燕麦玛芬燕麦曲奇以外,拿来做中式甜汤也非常好吃,加了芋头的甜汤更香。

In addition to making oatmeal for breakfast, old fashioned oats can also be used to make oatmeal muffins and oatmeal cookies.

【塔香广式烧肉】Thai Basil Stir Fry Cantonese Roast Pork

小时候每次过节或者拜拜剩下的广式烧肉妈妈就会加一把九层塔回锅煸炒,这样加工过的烧肉风味更佳,非常好吃。

去年冬天我在门口撒了一把九层塔种子,结果今年夏天家门口就九层塔泛滥了。现在已经来到了初秋,在它们被冻死之前努力吃九层塔,今天午餐就做塔香脆皮烧肉,烧肉是超市熟食部买来的,不够肥,这么做仍然非常美味。 

I have way too many Thai basil plant this year, I keep pulling them out to use in my dishes and I still have so many. But the weather is getting colder by the day, they won’t last for much longer, so you guys will be seeing a lot of Thai basil dishes from me before winter 😂 .

【蒜香奶豆腐咖喱】Lehsuni Paneer

 

奶豆腐是北印度非常受欢迎的食材,做法也很多,会和菠菜做成菠菜奶豆腐,或加和豌豆做成豌豆奶豆腐,还有俊宝很爱的奶香奶豆腐,还可以做成接近中式口味的酸甜奶豆腐,反正做法很多也都非常美味。

今天做的这款蒜香奶豆腐是蒜味比较浓郁的咖喱,沾着面饼特别好吃。

Paneer is a very popular cooking ingredient in North India, and there are many ways to use it in dishes. 

It can be made with spinach to make Palak Paneer, or cook with some peas to make Matar Paneer, and also my son's favorite Paneer Makhanwala, there are just so many ways to use the ingredients and turned it into delicious dishes.

The Lehsuni Paneer I made today is a creamy restaurant style North Indian Curry recipe, it uses a bunch of garlic in the recipe and have a strong garlic flavor, making it unique and very delicious serving with flat bread.

If you like garlic, you ought to try this!

【家常回锅肉】Home-style Twice-cooked pork


出差吃了快十天的西餐,非常想念热腾腾的白米饭配好吃的下饭菜。

刚好出门前冰箱也被我清得空空如也了,出门买菜时看见很久没吃的蒜苗/青蒜上市,买一把蒜苗,和一些五花肉,回家做一盘咸香下饭的回锅肉,真是好满足的一顿饭。

I have been on a business trip for more than a week, that many days of restaurant dining is all that I can handle. I was already craving for some hot steamed rice with home cook dishes for days.

Since I emptied the refrigerator before my trip, I went out to get some groceries after reaching home, the nearby Asian market has some fresh garlic chive on shelve and I hadn’t have fresh garlic chive for a long time. So I bought a bunch of garlic chive and some pork belly to make this twice cooked pork dish. This is one of my favourite Sichuan dishes, it really hit the spot and is precisely what I was looking for!

Pedal Ayam Masak Lemak Cili Api【椰香鸡胗咖喱】


Masak lemak 按字面翻译是用椰浆烹制的咖喱菜,据说起源于马来西亚的森美兰州,是米南加保族的特色菜。 这道菜可以用各种食材烹制,如鸡肉 、鱼肉牛肉或各式海鲜。

其底料基本一样,用生鲜姜黄、朝天椒 以及其他香草和香料制作而成。 

这道菜也会被称为 masak lemak cili api (padi),cili api指的是在这道菜中使用的朝天椒,表示这道菜的主旋律为辣和椰香味。 

这款咖喱菜在马来西亚很受欢迎,通常搭配参巴酱、米饭和蔬菜沙拉 (ulam)一起吃。

前两天韩国超市的鸡胗打折,我买了两盒回来换个口味做了这款简单的咖喱。又是一款下饭菜呀!

Masak lemak is a type of curry dish in vibrant yellow color, tasting spicy and creamy at the same time. It is said to have originated from the state of Negeri Sembilan in Malaysia, and is a specialty of the Minangkabau people. 

This curry is made with fresh turmeric, bird's eye chili, and other herbs and spices, it can be prepared with a variety of ingredients such as chicken, fish, beef or various types of seafood and vegetables. 

This dish is also known as masak lemak cili api (padi). The cili api/padi here refers to the chili peppers used in this dish, which is bird's eye chili, a type of chili pepper notable for its hot flavor. Which means that the main theme of this dish will be spicy aromatic.

This curry dish is very popular in Malaysia and is usually served with sambal, rice and fresh vegetables (ulam).

Homemade Char Siu Sauce【自制叉烧酱】

I made Wonton Mee & My Special Gon Loh Sauce few days back with my homemade Chicken Char Siu, a variation of the Char Siu which is commonly made with pork.

This Char Siu Chicken turned out delicious and very good looking, the secret to the beautiful red color is my homemade Ang Chow, which is a very healthy alternative to food dye, those who have not tried it, should explore and see! Adding the plum sauce also gives the dish fruity flavor, which is very tasty.

之前上了干捞云吞面的帖子之后收到几个朋友的短信询问鸡肉叉烧的做法,这款鸡肉叉烧我经常做,成品拿来做包子,炒饭,炒面都很好。

我用的是自制的红糟染的色,让小朋友吃我很放心。加了苏梅酱让做出来的叉烧带有清香的果味,更美味。

【韩式炸酱面】Jjajangmyeon (Noodles in black bean sauce)


Jjajangmyeon is actually a phonetic translation of Chinese words 炸酱面, this tells a lot about the origin of this dish. It is a popular Chinese dish with Korean touch, created by Chinese immigrants many decades ago in Korea. 

Those who watched K-drama should know what it is since it is a very common take out delivery dish in Korea, thus eating Jjajangmyeon is almost a sure scene in most of the K-Dramas! 

韩式炸酱面实际上是中式炸酱面的变种,是一道在韩国颇受欢迎的“中国菜”,是多年前由中国移民在韩国创造的一道美食。

看过韩剧的人应该对它很熟悉,它可是韩剧的常客,是很常见的外卖,吃炸酱面的镜头也几乎是每个韩剧中比会出现的场景!

前不久去韩国超市买菜的时候顺便在超市里的食阁点了一碗韩式炸酱面,味道不怎么样不说,材料也少得可怜,只有一堆洋葱和几块肉,真让人大失所望。想想还是自己买材料做了吃吧!

Cornflakes Chiwada 【印式花生玉米片小零食】


When I was living in India years back, I liked bringing some spicy snacks from the supermarket, one of them was similar to this peanut cornflakes snack that I make today.

Trader Joe's organic cornflakes is very suitable to make this snack, since it is low in sugar. I bought a box of it when I last shopped for my grocery and asked for some fresh curry leaves from my neighbor to make this delicious snack, it is such a good treat.

在印度居住的时候非常喜欢到超市买一些香辣小零嘴吃,其中就有这款花生玉米片小零食。

前几天在Trader Joe's 看见低糖版的有机玉米片,很适合拿来做这款零食,买一盒回家,再向隔壁邻居要来一点新鲜的咖喱叶,几分钟就做出好吃的小零食,真是太棒了。

【印度路边摊咖喱鸡】Dhaba Style Chicken Curry


这款路边摊咖喱是印度北方邦,尤其是邦遮邦那里常见的美食。我每次到印度北方探亲或游玩时,一定会在出游的时候,停在路边的小摊稍作休息时点来吃。

这款路边摊咖喱鸡是北印度比较有名的美食,各个摊子都有自己的做法,材料一般都很简单,做法也不复杂,味道却是出奇的好,是我很愿意吃的一款印度美食。自己在家做也不难哦!

This roadside stall (Dhaba) curry is a common delicacy all over the northern part of India, it is believed to have its origin from the state of Punjab, India. Eating this dish at some local Dhaba (roadside stalls) is a big part of our road trip whenever we visited India.

Each of these stalls has its own method and secret ingredients making this dish, making the eating experience a unique adventure on its own. The ingredients for this dish are generally simple and whatever is available during the season, the preparation method is  also normally very simple. Which gives the dish a very simple, rustic flair. Making it all the more attractive.

I sprinkled some Thai basil seeds sometimes around spring and a bunch of the seedlings came out! 

I have been pulling some out to make dishes and still, I have plenty. So today, basil omelette it is. 

年初撒了一把泰式罗勒种子到门口,结果长了一堆好密集。 间了好几次苗,也吃了好几茬了,还有那么多。 今天就做个九层塔煎蛋吧!

【胖大海炖梨】Malva Nut and Asian Pear Drink

 

朋友送来两箱子疏果时摘的亚洲梨,体积不大,但是很清甜。取几个煮这个胖大海炖梨,冷藏了喝,是这个夏天里喝了很舒服的一款饮料。

A friend sent two boxes of Asian pears she picked during fruit thinning in her garden. They are small in size but very sweet nontheless. 

I used a few of them to make this refreshing drink, a good way to stay cool during this heatwave.

今年夏天买过两箱的芒果,都非常甜,就拿来做一次这个全家都特别喜欢的甜点。真是夏日炎炎特别合适的一款美味甜点。

I bought two boxes of mangoes this summer, both are very sweet, I made this Mango and Sago dessert with it and it turned out well. The whole family likes very much. 

It is really a delicious dessert especially for hot summer like today.

Braised Pork Ribs with Potatoes 【土豆烧排骨】


好久没吃排骨了,去Costco买了一大盒猪小排,能吃好几次,非常实惠。今天炖了这个想吃很久的土豆烧排骨,里边的土豆比肉都好吃。

I haven’t eaten pork ribs for a very long time, so I bought a box of of pork ribs from Costco and made this braised ribs today, a dish that I have been craving for a long time.The potatoes taste better than the ribs! :)

【野苋菜马铃薯】Amaranth Potato Sabji

 


屋子前院好多年前长出一堆野苋菜,因为我们不打农药,所以我都会拔了做板面吃。后来不知道为什么,野苋菜就越长越多,盛夏期间至少能吃好几茬。

今天拔了一把特别嫩的野苋菜来做这道菜,配杂粮面饼非常美味好吃。

A bunch of wild amaranth has been growing in our front yard for years. I will pull some out to cook noodle soup each year. 

For some reason, the wild amaranth grew more each year, and I could eat at least several times each year during the summer season.

Today I harvested a handful of very tender wild amaranth to make this potato dish. It is very delicious with multigrain rotis. So thankful for this gift from our mother earth.

【手撕口水鸡】Sichuan Mouth Watering Chicken

 

很多超市的烤鸡是人尽皆知的价廉物美,可惜我们家几乎从来没办法完整地吃完一只烤鸡,所以很少会买超市的烤鸡吃。

前几天逛开市客想着很久没吃烤鸡了,就买了一只他家的烤鸡。吃了一顿后还剩下大半只待在冰箱里放着没人要吃了。

刚好记起之前看见过朋友圈好友把剩下的烤鸡用红油加工了吃,灵机一触,就把冰箱里剩下的烤鸡拿来做了口水鸡,结果当然就是被吃得干干净净了,就连不太会吃辣的俊宝都吃了不少。

Costco's rotisserie chicken is known to be priced reasonably, thus is one item most members purchase while shopping at Costco. Unfortunately, in our family, we can never finish a whole chicken at a time, so we rarely buy this rotisserie chicken. 

I went shopping at Costco last week and brought one rotisserie chicken since we have not eaten one for a long time. As usual, we were left with more than half of chicken and no one wanted it again.

I suddenly remembered a saliva chicken dish made by a friend on FB before, so I used the leftover chicken to make this dish, it is so tasty, that I think next time when I shop at Costco, rotisserie chicken will be in order!

【辣炒卤鸡胗】Stir Fry Chicken Gizzard With Pepper


买菜的时候如果发现鸡胗特价我经常会买两盒做卤鸡胗放冰箱慢慢吃。卤好的鸡胗除了直接吃,拿来这样炒辣椒/青椒也很下饭。

Whenever I find chicken gizzards on sale at the supermarket, I will often buy two boxes to make braised chicken gizzards and keep them in the refrigerator. 

The braised chicken gizzards can be eaten directly, it can also be easily converted into quick stir fry dishes like this stir fry chicken gizzard with chili/green peppers.

【炒合菜】Stir Fry Mixed Vegetables and Egg

 

几年前阿姨送我一盆她自己种的韭菜,结果每年都会自己长出来,所以每年春天开始就每几周就有一批韭菜可以吃。今天又收了一批韭菜,刚好家里有豆芽,就做了这个炒合菜,真是好吃呀!

My aunt gave me a pot of Chinese Chive that she grew, the chives have been coming back every year. So every few weeks from the beginning of every spring, I will have a batch of Chinese Chive ready for cooking. 

Today I harvested a batch of the Chinese Chive, and happened to have some bean sprouts at home, so I made this stir-fried vegetables with eggs. It is used as filling for spring rolls in the Northern part of China, I liked it with rice too.

【泰式南瓜布丁】Sankaya Faktung


I love all kinds of desserts in Thailand a lot, and this pumpkin pudding is one of them, as I also love pumpkin alot. 

I saw some small Japanese pumpkins (Kabocha) in an Asian supermarket couple of days back, it was perfect size for this dessert, so I bought a few and made this dessert. It is really delicious.

我很喜欢泰国的各种甜点,这款南瓜布丁尤其长到我的点上,因为我也很喜欢南瓜。不久前在亚洲超市看到刚上市的日本小南瓜,就买回来做一次这个甜点,真的特别好吃。

【潮州炸虾饼】Teow Chew Style Prawn Fritters

One of the famous supper choices in my hometown is this Chinese Style Prawn Fritters. The hawker selling this also sells fried tofu, fried fish cakes/balls and the likes.

To order a plate of fried goodies from the stall and dip into their special Sweet sauce and Chili sauce was one luxury thing to do as a kid. Probably one reason this snack still holds a very special place in my heart.

I have made this shrimp fritters with the mold before, today I have made another variation without mold and has less flour, it is tasting very good!

年少时周末口袋里要是有几毛钱,一般就会呼朋唤友到离家不远的小摊子吃夜宵。我最喜欢的一款夜宵就是这个炸虾饼,摊子老板也会同时卖炸豆腐炸鱼丸等等炸物。

点上一盘炸虾饼和炸物,沾着老板特制的辣椒酱和甜酱,边吃边和朋友聊天调侃,是那个年代最简单的乐趣。

我之前用模具做过传统的炸虾饼,非常好吃,今天做的这批面糊比较少,也不需要模具,想尝试又没有模具的朋友可以试试这个做法。

Summer holiday started and it has been raining for couple of days. Since we cant do much out door and the weather has been gloomy, I decided to bake a batch of this muffins for A's snack using the ingredients we have at home.

暑假开始了,却连续几天都在下雨。 周末没办法出门,我决定用家里的原料烤一批玛芬作为儿子的零食。这个周末就在家吃点零食,煲煲剧好了。

Pillow Style Cantonese Style Dumplings 【五角广式咸肉粽】


It was Dumpling/Dragon Festival last week, it is a tradition at home to make some dumplings (glutinous rice wrapped in bamboo leaves) during the season.

This year I started the festival with this Cantonese Style of Dumplings which have moong beans in it and tasted though different than the type of Bak Zhang that  I am used to and loved, it is still one  of my favourites.

今年端午节前一直想着要裹点粽子过节,材料都买好了,却一直等到端午节当天才有时间裹,虽然闽南烧肉粽是每年一定要裹的家乡味。

今年所裹的第一款肉粽却是这款港式/广式肉粽,它是我很喜欢的一款肉粽,也是俊干妈的家乡味,裹好分一半给俊干爹干妈过节。

【米粉肉】Steamed Pork With Crushed Rice


不久前买的五花肉非常好,留下半块一直想着要拿来做这个米粉肉,却因为工作忙了几天,一直到今天才有时间终于把米粉肉做出来了。

这款扣肉真是美味,以后我们家又多了一个年菜的选择啦!

I bought a very good piece of pork belly not long ago, I kept half of it and wanted to use it to make this Steamed pork with crushed rice.  I was caught up with work for a few days,  and didnt get to work on this dish until today. 

I am so glad I did and it tasted so delicious, and our family will have another Chinese New Year's dishes in the future!

【仙草水】【仙草豆奶】Grass Jelly Drinks & Cincau Soya

 

 

前几天加拿大的野火导致纽约附近的雾霾都很严重, 这样的天气让人感觉很不舒服,刚好我前阵子买了罐仙草罐头,也做了些豆奶,今天就做一些清凉好喝的仙草水和马来西亚人喜欢的仙草豆奶喝。

这两款饮料都是马来西亚人很爱的冷饮,一般是街边小摊既卖仙草水也卖豆浆,后来渐渐地出现了黑白两参,就是仙草加豆奶的饮料,让口感味道更加丰富,有机会你一定要试试哦!

The wildfires in Canada has caused severe haze at where we are. The air condition really made it hard to do much activities, I was having headache and scratchy throat all the time.

I just bought a can of Grass jelly not long ago and made some soy milk few days back. I decided to make some refreshing and delicious Grass jelly water and grass jelly soy milk that Malaysians like to drink to calm my throat.

These two drinks are very popular cold drinks among Malaysians. Usually sold at street stalls you must try it if you have a chance!

Glutinous Millet Dumplings 【大黄米咸肉粽】


It will be Dumpling/Dragon Festival next week, it is a tradition at home to make some dumplings (glutinous rice wrapped in bamboo leaves) during the season.

I always start my dumpling season with Cantonese Style dumplings, to share with my Cantonese friends, this year I decided to make some Glutinous Millet Dumplings, making it somewhat Diabetes friendly. 

Millets are an excellent source of fiber and contain a number of important nutrients. They score 52.7 on the glycemic index (GI), which is a medium value and lower than the value for maize, refined wheat flour, and rice. 

下周就是端午节了,在这个季节包一些粽子是家里的传统。我每年都是以广式粽子开始我的粽子季,因为俊宝的干妈是香港人。今年我决定做一些大黄米粽子,大黄米有极高的纤维,富含许多重要的营养素。 

它的血糖指数 (GI) 得分为 52.7,处于中等值,低于玉米、精制小麦粉和大米的值,所以这款粽子糖尿病患者也能适量吃一点哦!

【豆渣丹贝】Okara Tempeh


丹貝(tempeh)发源于东南亚的印度尼西亚,是一种大豆/豆类发酵食品,又名天培/天贝。

传统的做法是把煮熟脱皮的大豆加入根黴属(Rhizopus spp.)真菌,用香蕉叶包裹,室温(30C/85F)左右发酵36-48个小时,成白色饼状豆制品.可以用来烹调成多种不同的美食,是天然的肉类代替品。

丹贝的蛋白质和氨基酸含量很高,有素食者的肉类的美称,丹贝含有的游离氨基酸为总氨基酸含量的76%,是大豆发酵前的6倍。除此之外,维生素B12的含量也很高,是大豆发酵前的60倍左右。

真是营养好吃的食品,和豆腐/纳豆齐名喔!在欧美,丹贝也越来越受素食者的欢迎,一般的健康食品专卖店如 Whole food/Trader Joes 都有售卖丹贝或丹贝制作的素食品,也越来越多人开始自己在家制作丹贝罗!

前两天做了香浓好喝的豆浆,剩下的豆渣拿来做了丹贝。豆渣丹贝发酵很快, 大概24小时就发酵好了,做好的丹贝口感很绵密,味道非常好,真是变废成宝呢!

A white colour cake will form, and can be use to cook many delicious dishes, it is often used as meat analogue in some recipes too. It has gained more and more fame amongst vegetarian/vegan, so much so that people do start making it at home!

Today I tried making tempeh with Chickpeas and it turned out to be softer and equally tasty comparing to the Soy bean version!

I made some soy milk at home two days back, and used the pulp/Okara to make tempeh. Okara tempeh ferments very quickly, and takes only little more than 24 hours to ferment. 

The Okara tempeh has a soft texture and tasting really good. It is really a good way to turn waste into treasure!

Homemade Soy Milk 【自制豆浆/豆奶】



I started a budget for our grocery spending in May just to have a better understanding of how much we actually spend for grocery a month, with inflation and the current economy, it is crucial to be conscious about finances.

I also started a plan to utilize most of the stock we have in pantry before buying more stuff. With that said, I have been making homemade milk (soy, almond milk mostly) for my breakfast. Homemade soy milk is so smooth and creamy that it even gives me some bean curds!

今年五月我开始记录我们家的买菜钱,也有意识地进行预算。主要是想看看在通货膨胀的情况下,我们家一个月的买菜钱是多少。也想逐渐地把家里的囤货先给用完,也算是一个简单的断舍离吧!

所以这几周只要有时间我就会自制豆浆或者杏仁奶喝,营养好喝还节约。自己磨的豆浆很香醇,还每次都能捞出一小片腐竹,我都在炒菜的时一起加入炒了吃。感觉特别满足!

Home-made Chickpea Tempeh/Tempe 【鹰嘴豆丹贝】

 

丹貝(tempeh)发源于东南亚的印度尼西亚,是一种大豆/豆类发酵食品,又名天培/天贝。

传统的做法是把煮熟脱皮的大豆加入根黴属(Rhizopus spp.)真菌,用香蕉叶包裹,室温(30C/85F)左右发酵36-48个小时,成白色饼状豆制品.可以用来烹调成多种不同的美食,是天然的肉类代替品。

【印尼碎碎鸡】Ayam Penyet

 

印尼饭菜里我最喜欢吃的就是这款碎碎鸡饭了,没有之二。它有着所有我喜欢的东南亚元素,香辣美味,加上我喜欢的炸豆腐和炸丹贝和清爽的沙拉,完全满足了我的味蕾和胃。

平时我都是到离家半个小时车程的印尼超市买费城过来的碎碎鸡饭盒,刚好豆果美食上我有个可爱的粉丝让我写这款碎碎鸡的食谱,要求了快一年了。刚好这周做了一批芭蕉叶丹贝,就做一次碎碎鸡吧!

Nasi Ayam Penyet is my absolute favourite Indonesian dish, which is second to none. It has all the Southeast Asian elements that I liked. Spicy and savory, together with my favorite fried tofu and tempeh, and a refreshing salad on the side. It is a complete satisfying meal to the taste buds and the stomach.

I usually get my Ayam Penyet fix from an Indonesian supermarket half an hour away from home. It just so happens that I have a lovely fan from a China cooking app that has been asking me to write a recipe on Ayam Penyet for almost a year now. 

Since I just made a batch of Tempeh this week, it is a good time to make this Ayam Penyet since the side is ready. And a good chance to crossout one of my to do list.

【奶油马铃薯浓汤】Cream of Potato Soup

 

前不久做了蒜香黄油,抹到面包上烤香了真好吃,再做一个浓汤,就是周末最好的早午餐啦!

俊宝尤其喜欢,他现在能吃一口气吃四五块蒜香面包呢!

I made some garlic butter spread not long ago, it makes delicious garlic bread, goes well with creamy soup and is the best brunch over the weekend!

HOW TO MAKE BANANA LEAF TEMPEH【芭蕉叶丹贝制作】


I love tempeh as a side dish for rice dishes and have been making tempeh at home pretty frequently. I normally make my tempeh in  zipped lock bags or clean plastic bags. 
I have been wanting to make my tempeh wrapping in banana leaves, as banana leaves contain polyphenol compounds, as contained in tea leaves. Due to the polyphenols, banana leaves produce a distinctive taste and aroma in tempeh.
Besides, I am all for a much more environmental friendly options any time!
我很喜欢吃丹贝且经常在家制作,我通常用干净的塑料袋制作丹贝,也一直想着要用香蕉叶包裹制作丹贝。
香蕉叶不仅含有茶多酚化,能让丹贝产生独特的味道和香气,也更环保,真是一举两得。

【玉米面豆沙包】Corn Meal Adzuki Bean Paste Steamed Buns



我经常在家里做红豆包,是个很方便的早点和点心,自己做的也可以按喜好调整甜度,没有买来的齁甜, 今天做的这款豆沙包面皮加了玉米面,成品带有玉米香,更好吃!

I make Adzuki bean steamed buns a lot for breakfast, I liked that it is healthy and I could make it less sweet compared to the shop bought version, today I make a batch adding Corn Meal to the Skin dough, it turned out to be so fragrance and a lot more nutritious for sure.

Steamed Kaya (Steamed Coconut Egg Jam) 【蒸法咖椰/椰子酱】

I have made several kaya recipes with different methods, some takes longer time than others. One of the recipes even require standing in front of the stove and stir for hours.

The kaya I made today is made by the steaming method. It turned out legitimate, and I am loving the end result.

我做过好几款咖椰/咖央,做都比较耗时,有的还需要站在炉子前搅拌很长时间,今天做的咖椰用了蒸法制作,出来的效果很好,蛋香浓郁。

Ayam masak merah & Nasi tomato 【马来红炒鸡块&番茄香饭】


Ayam masak merah ('red-cooked chicken' in Malay) is a Malaysian chicken dish, cooked in spicy red chili sauce. It is often paired with tomato rice – a type of savory rice cooked with tomato paste, milk, dried spices. The duo is in my opinion, the best combo and hits the spot whenever I crave for some Malaysian dishes.

I made a batch of Homemade Tomato Paste last year with the last harvest of the tomatoes from my backyard.  I use it to make both the Ayam Masak Merah and Tomato rice and it turned out so well. You can also use the shop bought tomato paste, it will taste just as good, I promise.

Ayam masak merah(马来语中的“红炒鸡块”)是一款用辣椒酱烹制的鸡肉料理,和番茄焖饭搭配食用。在我看来,这个组合是我想吃马来美食时的最佳选择,香辣又饱腹,感觉就像回到家乡了一样。

去年秋末我把我家后院最后收获的西红柿用来做了几瓶番茄酱。 今天用它来制作 Ayam Masak Merah 和番茄焖饭,效果非常好。 你也可以用市售的番茄酱,味道差别不会太大。

【星空冰粉】Butterfly pea flower Ice Jelly

 

天气开始渐渐变暖,又是到了可以做冰凉甜点的时候啦。。。这款星空冰粉我想做很久了,成品真的很惊艳呢!

儿子说:“ 妈咪这款甜点真的让高级餐厅的甜点看起来就在骗钱呢!” 我可爱的儿子为了赞赏鼓励妈咪真的是花了不少心思呢!☺

The weather is starting to warm up a little, and it feels like it is time to make some cooking desserts again. . . 

I have been wanting to make this beautiful ice jelly dessert for a long time, and the finished product really is amazing!

Dear son said to me when I served him this dessert, that "Mommy, this dessert really makes the desserts of high-end restaurants look like scams!" 

My lovely son really put in a lot of efforts to praise and encourage his Mommy! ☺

Pineapple Kesari 【硬麦凤梨甜点】

多年前在吉隆坡工作的时候每个星期五会到公司附近的一家印度素食餐厅吃香蕉叶饭,饭后餐厅会提供一个甜点,有时是米饭布丁,有时是面条布丁,有时则是这款硬麦甜点。

前几天去附近的农夫市场买菜时看见凤梨正在打折,买一送一。就买了两个凤梨回家,拿来做一次这个很久没吃的甜点Kesari。

When I was living in the Kuala Lumpur years back, I will often go to an Indian vegetarian restaurant near my office to have banana leaf rice every Friday. The restaurant serves dessert after each meal, the dessert can sometimes be an Indian rice pudding/Kheer, and sometimes this suji dessert/Kesari .

The farmers market near my house was having pineapple on sale few days back when I shopped there. I bought two pineapples with the thought to make this Kesari, a dessert that I haven’t eaten for a long time.
