【奶油马铃薯浓汤】Cream of Potato Soup

 

前不久做了蒜香黄油,抹到面包上烤香了真好吃,再做一个浓汤,就是周末最好的早午餐啦!

俊宝尤其喜欢,他现在能吃一口气吃四五块蒜香面包呢!

I made some garlic butter spread not long ago, it makes delicious garlic bread, goes well with creamy soup and is the best brunch over the weekend!

HOW TO MAKE BANANA LEAF TEMPEH【芭蕉叶丹贝制作】


I love tempeh as a side dish for rice dishes and have been making tempeh at home pretty frequently. I normally make my tempeh in  zipped lock bags or clean plastic bags. 
I have been wanting to make my tempeh wrapping in banana leaves, as banana leaves contain polyphenol compounds, as contained in tea leaves. Due to the polyphenols, banana leaves produce a distinctive taste and aroma in tempeh.
Besides, I am all for a much more environmental friendly options any time!
我很喜欢吃丹贝且经常在家制作,我通常用干净的塑料袋制作丹贝,也一直想着要用香蕉叶包裹制作丹贝。
香蕉叶不仅含有茶多酚化,能让丹贝产生独特的味道和香气,也更环保,真是一举两得。

【玉米面豆沙包】Corn Meal Adzuki Bean Paste Steamed Buns



我经常在家里做红豆包,是个很方便的早点和点心,自己做的也可以按喜好调整甜度,没有买来的齁甜, 今天做的这款豆沙包面皮加了玉米面,成品带有玉米香,更好吃!

I make Adzuki bean steamed buns a lot for breakfast, I liked that it is healthy and I could make it less sweet compared to the shop bought version, today I make a batch adding Corn Meal to the Skin dough, it turned out to be so fragrance and a lot more nutritious for sure.

Steamed Kaya (Steamed Coconut Egg Jam) 【蒸法咖椰/椰子酱】

I have made several kaya recipes with different methods, some takes longer time than others. One of the recipes even require standing in front of the stove and stir for hours.

The kaya I made today is made by the steaming method. It turned out legitimate, and I am loving the end result.

我做过好几款咖椰/咖央,做都比较耗时,有的还需要站在炉子前搅拌很长时间,今天做的咖椰用了蒸法制作,出来的效果很好,蛋香浓郁。

Ayam masak merah & Nasi tomato 【马来红炒鸡块&番茄香饭】



Ayam masak merah ('red-cooked chicken' in Malay) is a Malaysian chicken dish, cooked in spicy red chili sauce. It is often paired with tomato rice – a type of savory rice cooked with tomato paste, milk, dried spices. The duo is in my opinion, the best combo and hits the spot whenever I crave for some Malaysian dishes.

I made a batch of Homemade Tomato Paste last year with the last harvest of the tomatoes from my backyard.  I use it to make both the Ayam Masak Merah and Tomato rice and it turned out so well. You can also use the shop bought tomato paste, it will taste just as good, I promise.

Ayam masak merah(马来语中的“红炒鸡块”)是一款用辣椒酱烹制的鸡肉料理,和番茄焖饭搭配食用。在我看来,这个组合是我想吃马来美食时的最佳选择,香辣又饱腹,感觉就像回到家乡了一样。

去年秋末我把我家后院最后收获的西红柿用来做了几瓶番茄酱。 今天用它来制作 Ayam Masak Merah 和番茄焖饭,效果非常好。 你也可以用市售的番茄酱,味道差别不会太大。

【星空冰粉】Butterfly pea flower Ice Jelly

 

天气开始渐渐变暖,又是到了可以做冰凉甜点的时候啦。。。这款星空冰粉我想做很久了,成品真的很惊艳呢!

儿子说:“ 妈咪这款甜点真的让高级餐厅的甜点看起来就在骗钱呢!” 我可爱的儿子为了赞赏鼓励妈咪真的是花了不少心思呢!☺

The weather is starting to warm up a little, and it feels like it is time to make some cooking desserts again. . . 

I have been wanting to make this beautiful ice jelly dessert for a long time, and the finished product really is amazing!

Dear son said to me when I served him this dessert, that "Mommy, this dessert really makes the desserts of high-end restaurants look like scams!" 

My lovely son really put in a lot of efforts to praise and encourage his Mommy! ☺

Pineapple Kesari 【硬麦凤梨甜点】

多年前在吉隆坡工作的时候每个星期五会到公司附近的一家印度素食餐厅吃香蕉叶饭,饭后餐厅会提供一个甜点,有时是米饭布丁,有时是面条布丁,有时则是这款硬麦甜点。

前几天去附近的农夫市场买菜时看见凤梨正在打折,买一送一。就买了两个凤梨回家,拿来做一次这个很久没吃的甜点Kesari。

When I was living in the Kuala Lumpur years back, I will often go to an Indian vegetarian restaurant near my office to have banana leaf rice every Friday. The restaurant serves dessert after each meal, the dessert can sometimes be an Indian rice pudding/Kheer, and sometimes this suji dessert/Kesari .

The farmers market near my house was having pineapple on sale few days back when I shopped there. I bought two pineapples with the thought to make this Kesari, a dessert that I haven’t eaten for a long time.

【药材鸡爪】Steamed Chinese Herbal Chicken Feet

Masak Lemak Udang Dengan Pucuk Paku 【椰香大虾蕨菜咖喱】



Masak lemak 按字面翻译是用椰浆烹制的咖喱菜,据说起源于马来西亚的森美兰州,是米南加保族的特色菜。 这道菜可以用各种食材烹制,如鸡肉 、鱼肉牛肉或各式海鲜。

其底料基本一样,用生鲜姜黄、朝天椒 以及其他香草和香料制作而成。 

这道菜也会被称为 masak lemak cili api (padi),cili api指的是在这道菜中使用的朝天椒,表示这道菜的主旋律为辣和椰香味。 

这款咖喱菜在马来西亚很受欢迎,通常搭配参巴酱、米饭和蔬菜沙拉 (ulam)一起吃。

朋友不久前给我寄了一箱子蕨菜,蕨菜是绝对要拿来做一次这款椰香黄咖喱的,今天就开动吧!

Masak lemak is a type of curry dish in vibrant yellow color, tasting spicy and creamy at the same time. It is said to have originated from the state of Negeri Sembilan in Malaysia, and is a specialty of the Minangkabau people. 

This curry is made with fresh turmeric, bird's eye chili, and other herbs and spices, it can be prepared with a variety of ingredients such as chicken, fish, beef or various types of seafood and vegetables. 

This dish is also known as masak lemak cili api (padi). The cili api/padi here refers to the chili peppers used in this dish, which is bird's eye chili, a type of chili pepper notable for its hot flavor. Which means that the main theme of this dish will be spicy aromatic.

This curry dish is very popular in Malaysia and is usually served with sambal, rice and fresh vegetables (ulam).

A friend of mine sent me a box of fern tips not long ago, I have been thinking of using it to make this masak lemak since, I finally have time to get to it today, it hit the spot right away!

Dal Maharani Paratha 【王后炖豆烙饼】

 

I made Dal Maharani for dinner two days ago, and was left with about 2 cups of the dal in the fridge. Today, I turned the dal into high protein dough and made this leftover dal paratha, very tasty and healthy!

前两天做了王后炖豆吃,剩下的豆糊今天拿来和面,做了这款高蛋白又软宣的面饼,既好吃又健康。

Chicken Jalfrezi 【Jalfrezi 炒鸡块】


According to Wikipedia : Jalfrezi recipes appeared in cookbooks of British India as a way of using up leftovers by frying them with chilli and onion. 

This English-language usage derived from the colloquial Bengali term jhāl porhezī: jhāl means spicy food; porhezī means suitable for a diet.

Jalfrezi is usually prepared by stir-frying the ingredients, a technique introduced to the region by Chinese cuisine.

印式中餐【客家炒面】Hakka Noodle


During my years in India, I often encountered a question that I could not answer until much later. The question goes : "Can you teach me how to make Gobi Manchurian, the CHINESE FOOD ?". 

Yeah you heard it right, India has its own version of Chinese foods. 

And the mentioned Gobi Manchurian is often paired with this Hakka noodle, a type of vegetable fried noodles that are normally made with dried egg noodles, a combinations that I enjoyed a lot in India as it is the closest things to Oriental cuisines that I could get.

在印度的时候我经常会遇见印度朋友问到:“你能不能教我做满洲花菜呀?”。让我非常啼笑皆非!后来再遇见这样的问题,我就会说:“满洲花菜不是中国菜!不过,却是最接近中国口味的印度菜!”

满洲花菜是印度式中餐厅主打的菜肴,经常和今天做的这款“客家炒面”一起吃,也是我在印度时经常点的套餐。算是口味最接近中餐的印度美食了。

【印尼Balado辣椒酱】Balado (Indonesian red chili paste)

 

几年前我接了一份在费城为期一年的工作,所以经常会在下班时开车到附近的“印尼城”去买印尼超市里的盒饭回家当晚饭。

其中一款我很喜欢的盒饭是Balado炸鸡盒饭,非常辣,非常好吃。我在家也经常做一盒Balado辣酱放冰箱里慢慢吃。

A few years back I was on a one year project in Philadelphia, PA, so I used to visit the "Indonesian Town" near my office in Philly after work to buy packed foods for dinner. One of my favorite packet meals is Balado Ayam, it is spicy and very appetizing.

I sometimes also make this spicy chili paste at home, and keep a box in the fridge to go with my meals.

According to Wikipedia : Balado is a type of hot and spicy bumbu found in Minang cuisine of West Sumatra, Indonesia. It has since spread through the rest of Indonesia and also Malaysia especially in Negeri Sembilan.

Coconut Chutney (with Garlic) 【南印椰子酱 #2】


Coconut Chutney is my husband’s favorite accompaniment to go with south Indian snacks like dosas and idlis. He loves his idli and dosa with coconut chutney and sambar.

I have made Coconut chutney without garlic with Gun Powder/Milagai Podi before. Today I am making this version of coconut chutney with Garlic.

南印椰子酱是俊爸吃米豆发糕和米豆煎饼时很喜欢的一款沾酱,和酸豆汤还有辣椒豆粉一起堪称为南印点心的金三角哦!

之前做过不带蒜的椰子酱,今天做的这款是带蒜的,更香。

Kulcha/Onion Kulcha 【印度Kulcha发面饼】

 


I used to make Homemade Naan a lot at home, we loved it when we have guests at home or when I make our favorite curry dishes. 

At times when I don't feel like starting the oven for naan, I make this Kulcha on stove top cast iron pan. It is also another very versatile and delicious bread, it could be served plain, or stuffed with stuffing of your liking, which I did, with onion today.

家里宴客或者过节的时候,我喜欢做烤箱版馕饼,家人和朋友们都很喜欢。

平时如果我不想开烤箱的话,我也会做这款Kulcha 发面饼,也非常松软好吃,还可以加上各种馅料做馅饼,今天用这个食谱做了两款面饼,其中一款加了洋葱,更美味。

【印度王后炖豆】Dal Maharani


这道“王后炖豆” 名字其实有点哗众取宠,它是相对印度另外一款很有名的炖菜“奶香炖杂豆Dal Makhni”而言取的名字。

一般Makhni奶油炖菜被认为是皇家美食,食材比较朵,是属于王者的美食。而这款很类似,但是材料内容有点不一样的豆子菜,为了识别它的不一样,就被命名为王后的炖菜啦!

Dal Maharani is a close relative to another famous Indian lentil stew "Dal Makhni". Generally speaking, Makhni stew is considered a royal delicacy, and is often served at festive or celebrations time. 

Dal Maharani literally means "The queen's lentil stew", it is probably named as such in comparison to the famous Dal Makhani, though very similar, Dal Maharani has its own distinct flavor and is simpler in terms of ingredients and preparation.

【马来大虾绿咖喱】Gulai Udang


这款“绿咖喱” 其实马来语叫Gulai,和一般香料用得很多的咖喱不太一样。它用的都是生鲜香草调味,口味上也趋于清淡,是简单又健康的一款佳肴。

This  Malaysian "green curry" is actually called Gulai in Malay. Which is different from the many common curries that most people are used to. 

It is prepared with mostly fresh herbs and tends to be lighter in texture. It is a simple and healthy delicacy that goes well with rice.

Vegetarian Fruit Rojak/White Fruit Rojak 【素食/白水果羅惹】


I made Fruit Rojak pretty often in summer, mostly for lunch when I am eating alone. I like the tangy, sweet, spicy flavor of it with refreshing fruits, extremely savory and light on the tummy.

Today I made this Fruit Rojak the vegetarian version without using the shrimp paste, adding yeast extract make it all the more nutritious!

罗惹是深受马来西亚人喜欢的一个街头小食,烈日当头的时候,来一小盘的水果罗惹,香鲜惹味,很开胃喔!

【红豆沙】Adzuki Bean Paste

平时家里做甜点红豆沙是我很喜欢的馅料之一,所以经常做一盒在冰箱里,要用的时候就很方便。

我有时也会做不细致的带豆子颗粒的豆馅,做法和红豆沙差不多,省去搅拌成糊状的步骤,直接炒制即可。

Adzuki bean paste is one of my favorite fillings for desserts, I often make a box of it and keep in the refrigerator, which is very convenient when I needed it.

I sometimes also make the bean paste without grinding it into paste. The method is similar to making the paste, just omit the step of blending the bean into a paste before stir frying.

Yellow Dal Paratha 【豆糊烙饼】

【嘛嘛罗惹】Rojak Mamak/Pesembur


Rojak mamak/Rojak Mee/Pesembur is another common dish served at the mamak stalls in Malaysia, a type of roadside stalls owned mostly by the Indian Muslim community in Malaysia.

This dish truly represents the spirit of the country where it was created, a mixed of different flavors -- savory, sweetness and spiciness, with multiple items serving together, that is no wonder when a Malaysian tries to describe something of that sort, a mixed of different things, we called it the "Rojak", as an adjective!

嘛嘛罗惹也叫做,Pesembur,能加了面条一起吃,也可以不加。是马来西亚嘛嘛档(马来西亚印籍穆斯林开的大排档)有名的小吃之一。

这款小吃很有马来西亚的精神,不单止口味口感丰富,配料也是各式各样的,混起来却很协调好吃。就像我的祖国马来西亚一样,多元化,却也很融合协调。

这款椰丝炸丸子没它的近亲马来炸虾饼和炸香蕉糕/丸子有名,却是另一款有名的马来街头小吃Rojak Mamak的标配。

就这么炸上一盘子就着奶茶就是很不错的下午茶和茶点了哦!

Not as famous as its close relatives Cucur Udang & Cucur Pisang, this Coconut fritter is one of the essential ingredients in the famous Malaysian Street Food Rojak Mamak.

A very good snack for afternoon tea on its own too!

【浥饭/油饭】Eik P'ng/Oil Rice

在闽南的民俗文化里,满月宴是庆祝家里新生命到来不可或缺的重要宴席。各家会按自己的能力尽量把礼仪都做全,为家中的新生儿办满月宴。 一般满月宴里一定会有浥[yì]饭,也叫“油饭”或 “香油饭”,寓意婴儿会健康成长。

浥饭是用豆腐干、虾米、香菇、肉等食材,连同糯米饭合煮而成,口味咸香,非常美味。

It is the folk customs of southern Fujian, to serve this Eik P'ng/ Oil rice at the full moon celebration for new born in the family. The Eik P'ng also called "oil rice" or "fragrant oil rice", it carries the meaning and wishes that the baby will grow up healthily.

This dish is made of dried tofu, dried shrimp, dried shiitake mushrooms, meat and other ingredients, together with glutinous rice. It is a very delicious rice dish on its own.

十全十美【盆菜】Poon Choi


【盆菜是一种混合了十几种食材的客家大菜,是源于香港新界元朗客家围村的传统菜式,深圳和香港新界的饮食习俗。是许多地区过年时的传统大菜】

今年除夕前我买好材料准备做盆菜团年饭时吃,结果却在除夕前染疫了。休整了十几天,算是完全痊愈了,趁元宵在即,就把盆菜做好,元宵节吃也很好哦!

Poon Choi is a type of Hakka dish made with more than a dozen of dishes/ingredients. It is a traditional dish from the Hakka Village in Yuen Long, New Territories, Hong Kong, and the eating customs of Shenzhen and the New Territories of Hong Kong. 

It is a traditional Chinese New Year dish in many regions.

I intended to make this dish for New Year's Eve this year, and bought the ingredients in preparation for the event. Just to find out that I contracted COVID-19 before New Year's Eve. 

After resting for more than ten days and is fully recovered. While it is still within the 15th days of CNY, I decided to complete my Poon Choi to celebrate Chap Goh Meh !

【福州芋泥】FooChow Or Nee

 


第一次吃芋泥是在马来西亚一家有名的福州餐厅,甜甜糯糯的芋泥是非常好的甜点,吃过让人久久不忘。

去年春节的时候我做了一批芋泥,成品非常好。却一直没机会写食谱,今年春节再做一次,写个食谱记录一下。

I had this Or Nee (taro dessert)the first time at a famous FooChow restaurant in Malaysia many years ago, on my grand father's birthday party. It is sweet and very fragrant, makes it a very good dessert. 

I made a batch of this Or Nee during Chinese New Year last year, and it turned out very good. But I have never had a chance to write a recipe. 

I make the same dessert again this year and decided to write the recipe down.

【大黄米年糕】Glutinous Millet Steamed Cake

大黄米又叫“黍”,是去了壳的黍子的果实,在古代被列为五谷之一。它比小米稍微大一点,颜色淡黄,煮熟以后非常黏。

大黄米中氨基酸的含量,几乎是大米和小麦的两倍,大黄米是粗粮,它有润肺、通便、养阴补虚功效。

再过一个礼拜就是农历新年了,今年买了一包中国西北产的大黄米,就用它来做一个中国北方吃的年糕吧!

Glutinous millet, was listed as one of the five grains in ancient times. It is yellow in color, and very sticky when cooked. The content of amino acids in millet is almost twice that of rice and wheat, thus it is a very good choice of carb in a balance diet.

The Lunar New Year is only one week away. I bought a bag of glutinous millet from the Northwestern China, and made this rice cake that is normally eaten during Chinese New Year in the North China!

【妈蜜排骨】Marmite Spare Ribs


朋友Ying姐去欧洲旅游时给我带来一瓶妈蜜(Marmite),妈蜜是一种使用酵母对酿造啤酒时产生的副产品进行二次发酵后生成的一种深褐色的、非常咸的干酱;是欧洲国家如英国所喜爱的酱料之一。

作为英联邦国家之一的马来西亚在饮食习惯上也很受曾经的统治国影响,而妈蜜,则是这段被统治历史的印证之一。这个酱料后来被融入到本地的烹饪方式里二次创作,这款妈蜜鸡就是其中一款啦!

My close friend Sister Ying brought me a bottle of Marmite as a souvenir from her Europe trip. Marmite is a kind of dark brown paste, a side product from beer brewing. It is one of the favorite sauces in European countries such as the United Kingdom.

As one of the British Commonwealth nations, Malaysia also is influenced by the former ruling country in terms of eating habits, and Marmite is one of the influence brought by the British. It was later being used in some of the local dishes and this Marmite Spare Rib is one of them.
