【米粉肉】Steamed Pork With Crushed Rice



I bought a very good piece of pork belly not long ago, I kept half of it and wanted to use it to make this Steamed pork with crushed rice.  I was caught up with work for a few days,  and didnt get to work on this dish until today. 

I am so glad I did and it tasted so delicious, and our family will have another Chinese New Year's dishes in the future!

450 克/1 磅 五花肉
2 根 青葱
两片 姜
1/2 杯/ 110 克 糯米
1/2 杯/ 110 克 白米
1 只 八角
1 小段 桂皮

1 大勺 甜面酱
1 大勺 酱油
1 大勺 料酒
1 块 南乳 (加点南乳汁)
2 小勺 糖
2 小勺 麻油/香油
食盐 少许

450 g/1 lb of pork belly
2 Scallions
2 slices ginger root
1/2 cup / 110 g sticky rice
1/2 cup / 110 g white rice
1 star anise
1 small piece of cinnamon

For Marinade:
1 tablespoon Chinese Sweet Sauce (甜面酱)
1 tablespoon soy sauce
1 tablespoon cooking wine
1 piece fermented tofu (腐乳)
2 tsp sugar
2 tsp sesame oil/sesame oil
a little salt 

1. 五花肉切成 2mm x 60 mm 左右的薄片,放到一个深碗里。

2. 姜片切成末,葱切成葱花,加入到肉里,和甜面酱、南乳、酱油、料酒、糖、麻油、少许食盐(口轻的可以不加盐)和 4-5 大勺清水拌匀腌至少2个小时,我腌制了一个晚上。

1. Cut the pork belly into thin slices about 2mm x 60 mm, and place it in a deep bowl.

2. Mince the ginger slices,  chop the scallions, add them to the meat, with Chinese sweet sauce, fermented tofu, soy sauce, cooking wine, sugar, sesame oil and a little salt with 4-5 tablespoons of water. Mix well and marinate the meat for at least 2 hours.

3. 把白米、糯米八角和桂皮洗净沥干,倒入锅里干煸至米粒变得轻盈,色泽微黄。放凉。

4. 取1/3炒米和八角桂皮一起磨成细粉,剩下的炒米磨成粗颗粒,和刚刚的细粉混匀。

5. 把磨好的米倒入腌制好的肉片里,用手抓匀,确保每块肉上都沾满米粉。

3. Wash and drain the white rice, glutinous rice, star anise and cinnamon bark, roast the mixture in a pan at medium until the rice grains become light and light yellow in color. Let cool.

4. Take 1/3 of the roasted rice with star anise and cinnamon bark and grind it in a coffee grinder into a fine powder. Coarsely grind the remaining roasted fried rice, mix the two batch together.

5. Add the roasted rice to the marinated meat, and rubbed the rice in use your hands to ensure that each piece of meat is covered with the roasted rice.

6. 把肉依次排好,肉皮朝下。放到一口深碗里,左右空隙再各塞两块肉。剩下的炒米铺满碗口。

7. 把米粉肉入锅中火蒸三个小时至五花肉完全软糯为止。

8. 蒸好的米粉肉倒扣到一个盘子里即可开吃。

6. Arrange the meat in order. Place the pork belly it in a deep bowl with the skin facing down, and stuff two pieces of meat on the left and the side of the bowl. Spread the remaining roasted rice over the top of the bowl.

7. Place the bowl in a steamer and steam it for three hours until the pork belly is completely soft and tender.

8. Overturn the steamed pork on a plate and serve immediately.
