Oatmeal Banana Muffins 【燕麦香蕉玛芬】


Summer holiday started and it has been raining for couple of days. Since we cant do much out door and the weather has been gloomy, I decided to bake a batch of this muffins for A's snack using the ingredients we have at home.

暑假开始了,却连续几天都在下雨。 周末没办法出门,我决定用家里的原料烤一批玛芬作为儿子的零食。这个周末就在家吃点零食,煲煲剧好了。

Ingredients:
1 1/4 cup All purpose flour 
1 1/4 cup old fashioned Oat
3-4 ripe bananas (mashed)around 1 1/2 cup of mashed banana
1/2 cup sugar
1 egg (lightly beaten)
1/3 cup Cooking oil
1 tsp baking soda
1 tsp baking powder
1 tsp of cinnamon powder
a pinch of nutmeg powder
1/2 tsp salt

Topping:
1/3 cup of old fashioned oats
1/4 tsp of cinnamon powder
1.5 tbsp of brown sugar
1.5 tbsp of melted butter

材料:
1 1/4 杯 中筋面粉
1 1/4 杯 老式燕麦
3-4 根 熟透的香蕉 约 1 1/2 杯香蕉泥
1/2 杯 糖
1 只 鸡蛋 
1/3 杯 食油
1 小勺 小苏打
1 小勺 泡打粉
1 小勺 肉桂粉
一小撮 肉豆蔻粉
1/2  小勺 盐

其他:
1/3 杯 燕麦
1/4 小勺 肉桂粉
1.5 大勺 红糖
1.5 大勺 融化的黄油


1. Mashed bananas until mushy, mix together all purpose flour, oats, salt, cinnamon powder, nutmeg powder, baking soda and baking powder.

2. Preheat oven to 350 F (175 C) .

3. Add sugar, egg and oil into mashed banana, whisk well. 

4. Slowly add the mixed flour in and use a spatula to fold the mixture until it is incorporated. Do not over stir the mixture.

1. 将香蕉捣成糊状,将中筋面粉、燕麦、盐、肉桂粉、肉豆蔻粉、小苏打和泡打粉混合。

2. 将烤箱预热至 350 F (175 C)。

3. 将糖、鸡蛋和油加入香蕉泥中,搅拌匀后慢慢加入混合好的面粉,用抹刀搅拌直至混合。 不要过度搅拌混合物。



5. Place baking cups onto muffin pan, scoop batter into muffin cups until around 3/4 cup full.

6. Mix together oats with brown sugar and butter, add about 1 tsp of this mixture on top of the muffin batter.

7. Bake the muffins for 18-20 minutes or until the top part is browned. Depending on the size of muffins.

4. 将玛芬垫纸放到玛芬烤盘里,将面糊舀入,至约 3/4 杯满。

5. 将燕麦、红糖和黄油混合在一起,在玛芬面糊上加入约 1 小勺的混合物。

6. 将玛芬入烤箱烤 18-20 分钟或直至顶部变成棕色。 烤制时间取决于玛芬大小而定。
