【潮州炸虾饼】Teow Chew Style Prawn Fritters

One of the famous supper choices in my hometown is this Chinese Style Prawn Fritters. The hawker selling this also sells fried tofu, fried fish cakes/balls and the likes.

To order a plate of fried goodies from the stall and dip into their special Sweet sauce and Chili sauce was one luxury thing to do as a kid. Probably one reason this snack still holds a very special place in my heart.

I have made this shrimp fritters with the mold before, today I have made another variation without mold and has less flour, it is tasting very good!




200 g Fresh water Shrimp/Prawn 
2 tbsp of All purpose flour
1 tbsp Rice flour
1 tbsp Custard Powder  or  substitute with corn flour
1 egg
1 tsp Baking Powder
1-2 tbsp of Ice water
1 tsp of cooking oil
1/2 cup of Chinese Chives (cut into 1 inch in length)
some cooking oil (for deep frying)

For the Seasoning: 
1 tsp salt  (or to taste)
1/4 tsp pepper powder
1/8 tsp Chinese Five Spice Powder
1/8 tsp chicken bouillon powder   Optional

200 克 小河虾
2  大勺 中筋面粉
1 大勺 粘米粉
1 大勺 蛋黄粉 (Custard Powder)或 粟米粉
1 小勺 泡打粉 (Baking Powder)
1 只鸡蛋
大约 1-2 大勺 冰水
1 小勺 食油
1/2 杯 韭菜 (切小段)
足够的食油 (炸饼用)


1 小勺 或适量 食盐
1/4 小勺 胡椒粉
1/8 小勺 五香粉
1/8 小勺 鸡精粉 可无

1. Clean the shrimps and drained, add one egg, salt, five spice powder, Chicken bouillon and pepper powder and marinate for 10 minutes.

2. Add all purpose flour, rice flour and custard powder and ice water to the shrimps, and mix well. Cover the with lid and let the mixture rest in the refrigerator for 20 minutes.

3. Clean the Chinese chives and cut the chives into 1 cm in length. Add the Chinese Chives to the shrimps mixture. Adjust the batter with some water if it is too hard to stir, add a tsp of oil to the mixture before frying.

4. Heat up the cooking oil for deep frying at medium high. Scoop about 1 tsp of the batter, gently drop the mixture into hot oil for frying. Turn and fry both sides until golden brown in color, dish out and drain on paper towel. 

5. Repeat the steps for remaining batter and ingredients.

1. 将河虾洗净沥干,加入鸡蛋1个、盐、五香粉、鸡精、胡椒粉腌制10分钟。

2. 将中筋面粉、粘米粉,蛋黄粉和冰水加入虾中,搅拌均匀后加盖冰箱里静置 20 分钟。

3、韭菜洗净,切成1厘米长。 将韭菜加入面糊中加一小勺油拌匀。

4. 将食油烧热,用中火炸虾饼。 舀出约1小勺面糊,轻轻放入热油中炸。 翻转并炸至两面呈金黄色,盛出并用厨房纸吸干油。

5. 剩余的面糊和材料重复上述步骤都炸制好。

Serve hot with some garlic chili sauce.
