【紫薯燕麦粥】Purple Sweet Potato Oatmeal


In addition to making oatmeal for breakfast, old fashioned oats can also be used to make oatmeal muffins and oatmeal cookies.

Oats are also very delicious when make into Chinese sweet soup/dessert. Adding purple sweet potato gives the dish a very vibrant color, not to mentioned the rich nutrients that comes with it.

150 克/一个 紫薯
1/2 杯/ 40 克 燕麦
1 杯 牛奶/植物奶/椰奶
适量 冰糖

150 g Purple Sweet Potato
1/2 cup/40 g of old fashioned-oats
1 cup milk/coconut milk
Some rock sugar

1. 把紫薯削皮切丁后放到锅里,注入1/3锅水,加入1/2杯燕麦和冰糖。

2. 大火煮滚后转小火加盖煮10分钟,熄火继续焖5分钟。

3. 吃的时候加入牛奶或者椰奶拌匀,喜欢口感更细腻的可以用搅拌棒或者搅拌机搅拌顺滑。

1. Peel and dice the purple sweet potato, place it into a pot with 1/3 pot of water, and add 1/2 cup of steel cut oats and rock sugar.

2. Bring to a boil over high heat, then turn down to low heat and cook covered with lid for 10 minutes, then turn off the heat and let it sit for 5 minutes.

3. Add milk or coconut milk and mix well before serving. If you like the oatmeal to be smoother in texture use a handheld mixer or blender to blend the oatmeal briedly.
