Shepherd's Purse Wonton 【荠菜馄饨】

Spring is my favorite season for a reason, as soon the the spring date passed and the weather warms up, many of the edible wild plants will appear one after another. 

Shepherd's purse is one of the earliest wild greens to appear in the spring, I always try to spot them before the flower stalks appear, the leaves are much more tender and sweet at this stage.

My favorite way to prepare this greens is to make it into wonton, one thing I look forward to eat every year around this time of the year.



Some of my friends asked me how to identify shepherd's purse in the woods, I decided to take some pictures and make a simple pictorial representation of distinguishing features of Shepherd’s purse.

Shepherd's purse is in the mustard family and is distinguishable by its valentine or purse-shaped seedpods. In the rosette stage, it can be distinguished from other mustard with the lobed basal leaves which are uniform on each side. 

The Shepherd’s purse flowers resemble wild mustard in form but are white and much smaller (3-8 mm across) in rounded clusters at the ends of stems.

The leaves are stalked, and the first leaves are usually rounded, while the later leaves are usually deeply toothed but may be rather variable. Smaller, slightly toothed, alternate leaves clasp the flower stalk. 

Shepherd's-purse occurs throughout grain fields, waste areas, roadsides, in gardens and lawns. It is also a common weed of cultivated soil. 


荠菜(jì cài)(学名:Capsella bursa-pastoris (Linn.) Medic.),是双子叶植物纲 、十字花科、荠属植物荠的通称,一年或二年生草本,高10-50厘米,无毛、有单毛或分叉毛;茎直立,单一或从下部分枝。基生叶丛生呈莲座状,大头羽状分裂,顶裂片卵形至长圆形,侧裂片3-8对,长圆形至卵形,顶端渐尖,浅裂、或有不规则粗锯齿或近全缘;茎生叶窄披针形或披针形,基部箭形,抱茎,边缘有缺刻或锯齿。

总状花序顶生及腋生,萼片长圆形;花瓣白色,卵形,有短爪。短角果倒三角形或倒心状三角形,扁平,无毛,顶端微凹,裂瓣具网脉;种子2行,长椭圆形,浅褐色。 地方上叫香荠,北方也叫白花菜、黑心菜,瑶家叫“禾杆菜”,河南、湖北等地区叫荠荠菜,四川人叫“干油菜”,是一种人们喜爱的可食用野菜。

其拉丁种名来自拉丁语,意思是小盒子、“牧人的钱包”,是形容它的角果形状像牧人的钱包。英语名称就是“牧人的钱包”。 起源于东欧和小亚细亚;全世界温带地区广布。野生,偶有栽培。生在山坡、田边及路旁。

150 g Minced pork
150 g Cleaned and blanched Shepherd's purse
1 Packet of shop bought wonton skin

1 Scallion
1 small piece of ginger root
1 tsp of salt
1 tsp of Light Soy sauce
1 tsp of sesame oil
2 tsp of oil
A pinch of sugar or a little Chicken bullion
Some white pepper powder

A small piece of dried seaweed

150 克 猪绞肉
150 克 荠菜 (洗净处理好汆烫好后的重量)
1 包 馄饨皮

1 根 青葱
1 小块 姜
1 小勺 食盐
1 小勺 酱油
1 小勺 香油
2 小勺 食油
一点点 糖 或鸡精粉
胡椒粉 适量

一小片 紫菜
一小把虾皮  (可无)

1. Clean and blanch the Shepherd's purse for 45 seconds. The fresh young leaves has a very pleasant smell.

2. Squeeze the excess water from the leaves and weigh 150 g out, pack and freeze the remaining for later use. Finely chop the leaves.

3. Blend the scallion and ginger with 1/2 cups of water to make ginger scallion water. Slowly add the ginger scallion water to the minced pork, add all seasoning mentioned above to the pork and mix well, marinate the pork for about 10 minutes.

4. Add the chopped shepherd's purse and mix well.

5.  Take a wonton skin and place 1/2 tsp of minced meat in the middle, fold and seal with a little water to make the wonton whichever shapes you prefer.

1. 把挖回来的荠菜洗净摘好,刚挖出来的荠菜有股特别好闻的清香味。洗净的荠菜入滚水汆烫45秒,取出过凉水沥干备用。烫过的荠菜翠绿翠绿的特别好看。

2. 烫好的荠菜挤干水分取150克切碎备用,剩下的可以装袋子里冷冻起来。

3. 把姜葱加1/2杯水搅拌成姜葱水,慢慢把姜葱水拌入猪绞肉里。然后加入所有的调味料搅拌匀稍微腌制10分钟,包之前拌入切碎的荠菜。

4. 取馄饨皮按自己喜好包成馄饨。

6. Bring half a pot of water to boil, add the wonton and cook for 3 minutes, add 2 tbsp of water to calm the boiling, when the water is boiling again,  the wonton are cooked.

7. You can serve the cooked wonton in a bowl of hot broth with some seaweed, or you can serve the wonton with a little red chili oil, vinegar and soy sauce.

5. 锅里煮滚大半锅水,把包好的馄饨入锅煮滚后加一点水再次煮滚。

6. 另外一口小锅里煮滚一大碗鸡汤,加点食盐调味后加入煮好的馄饨,然后可以按自己喜好加虾皮蛋皮和紫菜吃。
