【酱香茄丁卤面】Eggplant Black Sauce Noodle


Traditional Beijing Zhajiang Mian (Black sauce noodle) is one of my favorite ways to have noodle. Today I am making a variation of the noodle using Japanese Eggplant, another favorite cooking ingredients in our house. It turned out to be so delicious that even my 7 year old had a full bowl.

老北京炸酱面浓浓的酱香味是许多人欲罢不能的美味,我也经常在家里做了吃。今天做了带茄丁的这款面,依然是美味得不得了。连俊宝都吃了一整碗呢!



材料:
200 克 梅头肉 (切丁)
1 根 茄子 (茄丁)
1 小勺 干黄酱 (我用了Miso)
1 小包 甜面酱
一根葱
1 小勺 姜末
1 小勺 糖

Ingredients:
200 g of pork belly (Skinned, and cut into small pieces)
1 Japanese Eggplant (Clean and cubed)
1 tsp Yellow fermented Soy Sauce (I used Miso)
1 packet of sweet sauce (甜面酱)
1 spring onion
1 tsp minced ginger
1 tsp Sugar




1. 把梅头肉茄丁用一点蚝油一点料酒一点食盐腌制十分钟。

2. 茄子茄丁后微波炉里转3分钟(也可以入油锅炸一下)。

3. 锅里热上2-3 大勺油,把姜蓉和葱花入锅爆香后加入肉丁煸炒至变色。

4. 把甜面酱和干黄酱加3大勺热水混匀,倒入锅内翻炒匀后加入1/2碗水,加盖焖煮5分钟或至水份减少一半。

5. 加入糖调味,加入茄丁翻匀后再加盖中火焖5分钟即可出锅。

6. 把面条煮好摆到碗里,浇上2大勺茄丁肉卤,拌匀即可开吃,记得带上几瓣蒜噢!

1. Cut the meat into cubes, marinate with some oyster sauce, cooking wine and a little salt for 10 minutes.

2. Cut the Japanese eggplant into cubes and cook the cubes in microwave for 3 minutes. (You can also deep fry the eggplant in hot oil for 1-2 minutes).

3. Heat about 2-3 tbsp of oil in a cooking pan,  add minced ginger and chopped scallion and cook for 1 minute, add the meat cubes and cook until the meat changes in color.

4. Add 3 tbsp of hot water to 1 tsp Yellow fermented Soy Sauce and 1 packet of sweet sauce (甜面酱)and mix well,add the sauce into cooking pan and cook for 1-2 minutes, add 1/2 cup of water into the pan, cover with lid and cook for 5 minutes or until the liquid become half in volume.

5. Season with sugar, add the eggplant pieces, turn well and cover with lid, cook at medium heat for another 5 minutes.

6. Cook noodle of your choice according to manufacturer's instruction, place the noodle in a bowl, place about 2 tbsp of the eggplant meat sauce over noodle. Mix well and serve hot! You can eat the noodle with some pickled garlic or raw garlic!
