【日式汉堡肉】Japanese Hambugu Steak (ハンバーグ)


多年前去日本当交换生时第一次吃这个日式汉堡肉,对于汉堡肉不带面包吃的这个操作充满好奇,也非常喜欢。来了美国后一直想要在家做这个汉堡肉吃,但我们家很少吃/做牛肉,所以也一直没实现。

最近因为疫情一直被关在家里,邻居法兰克是个独居老人,平时我做了好吃的会送一份过去放他门口。自从超市开放早上时段让老人购物后,法兰克去购物时就会给我带些食材,我不想给没收入的他带来压力,所以每次他问我要什么的时候都说我不需要。于是他就会按他自己的购物习惯给我多带一两样,前几天他送来了两包的有机牛肉末。

既然有了牛肉末,就做一次日式汉堡肉给儿子尝尝吧!结果儿子非常喜欢,吃完了还交代说第二天一定要吃一模一样的午餐噢!

The first time I had this Hamburger steak was in Japan as an exchanged student, the way Japanese served their burger patties without bread was really new to me and with great surprise, it tasted really well together with some rice served on the side!

My neighbor brought me two packets of organic minced beef few days ago, I immediately know what I am going to do with it! Dear son loves the hamburger steak I made with it and was requesting the same lunch again the next day.



材料:

汉堡肉材料:
450 克 牛肉末
150 克 猪肉末
200 克 洋葱末
1 只 鸡蛋
35 克 面包屑 或 燕麦
1 大勺 蚝油
1/4 小勺 黑胡椒粉
1/4 小勺 豆蔻粉
1 大勺 食油
1 小勺 蒜盐 或 食盐

酱汁:
3 大勺 红酒/葡萄酒
3 大勺 番茄沙司/Ketchup
1 大勺 辣酱油 Worcestershire sauce
1 大勺 蚝油
3 大勺 水

Ingredients:

For the patties:
450 g Minced  beef
150 g Minced pork
200 g Minced onion
1 large egg
35 g of Panko OR Oatmeal
1 tbsp oyster sauce
1/4 tsp black pepper powder
1/2 tsp Nutmeg powder
1 tbsp oil
1 tsp garlic salt

For the gravy:
3 tbsp Red wine
3 tbsp ketchup
1 tbsp Worcestershire sauce
1 tbsp of oyster sauce
3 tbsp water




1. 把牛肉末和猪肉末放到一个大盆里,加入面包屑和所有调味料。

2. 大洋葱一颗,用食物料理机切碎加入肉末里。

3. 戴上手套把肉末和调味料拌匀,静置10分钟。

1. Place minced beef and pork in a large mixing bowl, add panko and all the ingredients listed under patties.

2. Chop a large onion in a food processor until fine, add it to the mixing bowl.

3. Mix all the ingredients together and let the minced meat sit aside for 10 minutes.



4. 把酱汁里列出的所有材料加到一口小锅里中小火煮至浓稠。备用。

5. 取2-3大勺的肉末在手里握成球状后把肉球左右手互抛,把肉球渐渐抛结实,这样做出来的汉堡肉口感更好,煎的时候形状更好看。

6. 把肉球在双掌间压成1.5公分左右的肉饼。中间压出一个凹痕,这样煎的时候不会因为膨胀过度而爆裂。

7. 把肉饼煎/烤至你喜欢的熟度后装盘淋上酱汁,加上配菜即可上桌。配米饭也特别可口的噢!

4. Mix together all ingredients under gravy, place it in a saucepan and cook at medium low heat until thickened. Leave it aside.

5. Take about 2-3 tablespoonful of the burger meat and make into a solid ball, "bounce' the meatball in both the hands like you would while practicing baseball, this method will help making a meatball that is solid and  will stay in shape during grilling.

6. Lightly press the meatball down to flatten it to a shape of a patty, make a small dent in the middle to help prevent breaking.

7. Grill/cook the hamburger steak until cooked, you can cook the burger steak to the level of done-ness of your liking. Repeat the steps to make the remaining hamburger steaks,serve with gravy on top and your favorite side dishes. It goes very well with rice too!
