Cornflake Cookie

This cornflake cookie is a simple but tasty snack, it can be done within half an hour, goes well with coffee, and smell heavenly while baking!

1 cup brown sugar
1 egg
1/2 cup unsalted Butter
1 tsp vanilla essence
1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup whole wheat flour
1 1/2 cup All purpose flour
1 cup dried fruit or mixed nuts, anything you fancy
1 tbsp coconut flakes
1 or 2 cups cornflake cereal

Creamed together eggs, butter (room temperature),vanilla essence and sugar.

In another mixing bowl, mixed all the dried ingredients - baking soda, baking powder, flour, salt. Add 1 cup of dried fruits or mixed nut, anything you fancy.

Mixed all the ingredients well, then add 1 or two cups of cornflakes and mixed well.

Drop a spoonful of dough on baking pan using teaspoon. At the same time preheat oven to 375 F. Bake the cookie for 9-10 minutes.

This was made with only 1 cup of cornflakes, these are softer and chewy.

These are with 2 cups cornflakes, these are more crunchy.

Its time for coffee/tea!
