Baigan Choka (Roasted Eggplant)


I really love the special flavour this mashed eggplant carries, the way it was prepared brings a very distinct flavour and I had a lot of fun preparing it....
Ingredients:

1 Eggplant
2 Medium size tomato
4-5 cloves of garlic
1/2 Onion (Chopped)
2-3 Green chilies (chopped)
1 tbsp of oil


Seasoning:
Some chili powder
Salt to taste


These eggplant was planted by me... the very last two in my storage..



Rubbed some oil on the surface of eggplants, and roast it on stove, keep turning until it is soft (cooked), do the same for tomatoes and garlic, its better to cover the stove top with foil paper while doing this for easier cleaning later.



I liked it to be a little more cooked and soft, thus I grill it at 400F in my toaster oven for another 10 minutes.



Let it cold down a little and remove skin of eggplant, tomato and garlic, and mash it with a fork or potato masher, add salt and chili powder for seasoning.



Mixed in the chopped onion and green chili, you could stir fry the onion a little if you do not fancy raw onion taste/smell.
P.s: Could also add a few drops of lemon/lime juice for flavoring.



It goes well with chapati/chips/corn chips and naan!
