【藏红花饭】Saffron Rice




Saffron is believed to have good medicinal properties since ancient time. The Chinese use it to help women regulating menstruation cycles, improve blood circulation, help remove blood clots/blue black.

It is also important to know that saffron is not advisable to use on pregnant lady and or during menstruation, as it could cause excessive bleeding, and possible miscarriage.

This saffron rice works well as a side dish to go with fish or any seafood, it could be prepared in under 20 minutes!

材料:(2-3 人份)
1 杯 Basmati 香米
1 又 3/4 杯 鸡汤/高汤 (或用一点鸡精块加水)
1/4 小勺 食盐
2 大勺 青豆
30-35 根 藏红花 (saffron)
1/4 小勺 姜黄/黄姜粉 (Turmeric Powder)
1 小勺 蒜蓉
1/2 小勺 青柠/柠檬汁
一撮辣椒粉 可无

Ingredients:(yield 2-3)
1 cup Basmati rice
1  3/4 cups chicken/vegetable stock(or water with small piece of stock cube)
1/4 tsp salt
2 tbsp frozen peas
30-35 threads of saffron
1/4 tsp Turmeric Powder
1 tsp Minced garlic
1/2 tsp Lime/lemon juice
A pinch of chili powder  optional

1. 把米淘干净,然后在一口锅里把高汤、蒜末、辣椒粉、姜黄粉和柠檬汁加入煮滚。

2. 加入米和食盐先大火煮滚,然后转中小火焖煮10-15分钟至水份完全蒸发,转小火焖煮5分钟。然后拿个叉子把米饭弄松,熄火,加入青豆和藏红花,加盖虚焖5分钟即可。


1. Wash and drain rice, place the chicken stock, garlic,turmeric powder and chili flakes in a heavy bottom cookware, and bring to boil.

2. Add rice and salt and bring to boil, turn the heat to medium low and cover with lid, cook the rice for 10-15 minutes until all liquid evaporated, turn the heat to low and simmer for 5 minutes.

3. Use a fork to loosen the rice, add the frozen peas and saffron before turning off the stove . Let the rice sit for 5 minutes with lid on before serving.

I serve this rice with Puerto Rican bean stew, It goes well with any type of curry or protein and vegetables.
