Thai Basil Fish




I always planted some Thai basil every summer, it is an essential ingredients in Thai dishes, which I love dearly...it could also be used for some Taiwanese dishes like Salt fried Chicken (盐酥鸡) and 3 cups chicken (三杯鸡).

My Thai basil grow well as usual for this year, and we have got some fresh salmon at home, so I made this delicious fish dish for lunch!


Ingredients:
350-400 gm Salmon (cut into pieces, marinates with pepper powder and a little salt for 10 minutes)
1-1 1/2 cup of fresh Thai basil leaves
3-4  Thai chilies slice (use any other chilies for less heat)
2-3 clove of garlic (skinned and sliced)
1/2 medium size onion (thinly sliced)

Seasoning:
2-3 tsp Fish sauce (or soy sauce)
1 tsp Oyster sauce
1/2 tsp brown sugar/palm sugar
1 tbsp or 1/2 lime squeeze out the juice (Lemon juice works too


Part of the ingredients:



Shallow fry the fish pieces until golden in color.

Leave about 2 tbsp of oil in the cooking pan, stir in sliced garlic, onion and chilies, when it is fragrant, add the fish pieces and all the seasoning with 1/4 cup of water, bring to boil and cover with lid, cook for 2-3 minutes or until it reaches desire sauce consistency.

Turn off the heat and add Thai basil leaves, mix well, and it is ready to serve!



I think steamed rice and  this fish dish are perfect for each other!
