Gluten Free Cream of Cauliflower Soup 【花菜浓汤】



My husband N has not been well in the past two weeks, I made this gluten free soup for him yesterday with the hope that he will gain some strength. My son A had it for dinner and he liked it too!

俊爹上周做了比较大的手术,我这两周也因为他入院和手术的事情四处奔波,几近心力交瘁。这几天他出院后我倒是松了口气,除了接送孩子外,可以安心在家照顾俊爹,自己也可以多点时间休息。
他因为手术,脸部肌肉受影响没办法咀嚼食物,医院叮嘱了只能吃流质或糊状的食物,冰箱里刚好有之前买的有机菜花,晚餐加上腰果和核桃做成了这款浓汤,他虽然没胃口却也喝了半碗。晚餐也给了俊宝这款浓汤,他居然说很牙米,一锅汤给病人和小孩都补充了营养,很是不错。

Ingredients:(3-4 servings)
400 gm Cauliflower Florets
1/2 cup/ 70 gm  Cashew nuts
1/4 杯/ 25 gm walnuts
1/2 Onion (Chopped)
4-5 Cloves of garlic (Smashed)
1 Spring Onion/Scallion Optional
2 tbsp Olive Oil/Butter
4-5 Cup Vegetable broth/water

Seasoning:
Salt
Black Pepper powder

材料:(3-4人量)
400 克 菜花/Cauliflower
1/2 杯/ 70 克 腰果
1/4 杯/ 25 克 核桃仁
1/2 只 洋葱 (切碎)
4-5 瓣 蒜瓣 (拍扁)
1 根 青葱  Optional
2 tbsp 橄榄油/黄油/Butter
4-5 杯 蔬菜高汤/水

调味:

胡椒粉




1. Soak walnuts and cashew nuts for 10 minutes. Meanwhile, chop the onion and peel and lightly crush the garlic.
2. Heat up 2 tbsp of olive oil/butter, stir fry chopped onion and garlic until onion becomes translucent, add spring onion now if use.
3. Break cauliflower into florets, wash and drain, Add the cauliflower into cookware, cook for a few minutes, add cashew nuts and walnuts, stir for a minute or two. Add 4-5 cups of water or vegetable stock. Bring to boil and turn to medium and continue cooking for 15-20 minutes, until cooked.
4. Blend the soup using a blender or handheld blender until smooth. Continue cooking and season with salt and pepper.


1. 把核桃和腰果用水泡上十分钟左右,洋葱切碎,蒜瓣去皮拍扁。
2. 锅里热上2大勺的橄榄油/黄油把洋葱和蒜瓣煸炒香,此刻也可以加入青葱段。
3. 把菜花掰成小块,洗净滴干水之后加入锅里翻炒几分钟后加入腰果和核桃仁,翻炒一阵子后加入4-5杯水或高汤。煮滚后加盖小火再煮15-20分钟,至花菜变软。
4. 稍微冷却后把锅里所有的材料倒入搅拌机里,搅拌顺滑成浓汤。再倒入锅里继续加热,加盐调味即可。

吃的时候可以撒点黑胡椒粉。
 Serve with some garlic bread.
