A friend of mine called to inform me that her Chinese toon has sprouted and told me to go harvest some for cooking. I collected about a basket-full of the Chinese toon young leaves and made some Chinese toon sauce.
I also kept aside a bunch to make this Omelette, it is a delicacy that comes with spring!
剩下的一小部分做了这个香椿煎蛋,非常好吃,真是一到春天必吃的美味呢!
Ingredient:
A bunch of Young Chinese Toon leaves
2-3 Eggs
A pinch of salt
A pinch of Pepper powder Optional
材料:
1 把 香椿芽
2-3 只 鸡蛋
一点食盐
一点胡椒粉 (可无)
1. Remove hard stems of the young Chinese toon leaves, washed and drained completely.
2. Bring half a pot of water to boil, blanch the leaves for 45 seconds or until wilted. Drained and chop the leaves into small pieces.
3. Break and beat the eggs with salt and pepper, add the chopped Chinese toon leaves into the egg.
4. Heat the cooking pan up with some oil and cook the omelette both side until golden brown in color. Serve warm.
1. 把香椿叶的硬梗摘除,只去嫩叶和嫩枝,洗净沥干水。
2. 把小半锅水煮滚,把香椿叶入锅烫45秒左右。取出把香椿叶切小段。
3. 把鸡蛋和食盐还有胡椒粉打散,把切好的香椿加到蛋液里。
4. 热上一口锅,加入一点食油把鸡蛋和香椿两面煎熟即可。
