前阵子在超市买了几只紫薯打算烤了吃,剩下的两小只我拿来做了这款紫薯发糕当早餐,成品颜色非常让人惊艳,味道也非常好吃。真是一款赏心悦目的糕点。
I bought a few Purple sweet potatoes as snacks and made this steamed cake with two of them, the color of this cake is so enchanting that it is almost sad to eat them! LOL
Ingredients:
150 g purple sweet potato puree
120 g all purpose flour
2 tbsp of sugar
1 tsp of Yeast
1 tbsp of mixed dried berries
1 tsp of oil
材料:
150 克 紫薯泥
大约 120 克 面粉
2 大勺 糖
1 小勺 酵母
1 大勺 葡萄/蔓越莓干
1 小勺食油
1. 紫薯削皮后蒸30分钟至变软。取150克蒸好的紫薯趁热搅拌/压成泥,加入2大勺白糖混匀稍微冷却至触摸起来微温的时候加入1小勺酵母拌匀。
2. 把面粉分批加入紫薯糊里,加上一小勺食油,把紫薯糊和面粉拌匀。面糊拌到快搅不动的粘稠状即可,如果稀了可酌量加点面粉,如果紫薯泥太干可以加一小勺水。
3. 拌好的面团放到温暖处发酵30分钟或至差不多两倍大,再次搅拌消气。
1. Peel and cubed sweet potato and steamed it for 30 minutes, weigh 150 g of the steamed potato out and mashed the sweet potato into paste,add a tbsp of water if the paste is too dry.
2. Add the sugar and mix well, when the sweet potato paste becomes slightly higher temperature than room temperature, add 1 tsp of yeast and mix well.
3. Add the flour in batches with 1 tsp of oil to the paste and stir the paste and flour together to form a sticky dough, when the stir of dough become hard, the consistency of dough is right. You may not need the whole measurement of flour, depending on the consistency of the dough.
4. Leave the dough in a warm place to rise, around 30 mins, when the dough has rises to about almost doubling its size, stir to move air from dough.
4. 把一个6寸蛋糕盘抹上油,把面糊倒入烤盘里,表面用一点点水抹平。摆到温暖处二次发酵25-30分钟或至面团稍稍少于两倍大。
5. 把葡萄干和蔓越莓干轻轻按到发酵好的面糊表面摆成自己喜欢的样式做装饰。
6. 把发糕入蒸笼高火蒸25-30分钟,蒸好先别揭盖,稍微等3-5分钟再揭盖。冷却后脱模切块吃。
注:如果是可以调节温度的电子蒸笼调到高火350F/175C蒸制。
5. Brush a 6 inches round baking pan with some oil and place the dough in the pan, rub the surface with a little water to smoothed it.
6. Place the dough in warm place and rest for 20-30 mins, decorate the cake with dried berries on the surface.
7. Steam the cake at about 350F (175C) at high for 25-30 mins. Once the steaming is done, wait for 5 minutes before opening the lid. Wait for the cake to cold down before removing from pan and slice to serve.
