【肉末烤茄子】Grilled Eggplant with Minced Meat


I always have a box of Minced Meat Sauce in the fridge, it is a very versatile and useful ingredient for cooking.

Today I am going to use it to make a type of grilled eggplant that I make very frequently, it takes only about 10 minutes to prepare if you already have the minced meat at hand.

1 条 长茄子
3-4 大勺  多用途肉臊 (

1 Japanese Eggplant
3-4 tbsp of  Minced Meat Sauce
A little minced scallion
A little minced red Chili   Optional

1. 把茄子洗净后轻轻地在一面按茄子的长度划一刀,薄薄地抹上一层油(可无)后入微波炉高火转5分钟(在茄子上加盖的话颜色更好)。

2. 把烤好的茄子取出用个小勺子按刀痕压压,这个时候茄子已经很软了,很容易就摊开成船型。

3. 取几大勺的多用途肉臊和两三勺水放到锅里加热,喜欢吃辣的可以加一勺家常辣椒油煮至肉臊收汁即可。

4. 把煮好的肉臊直接铺到茄子上,撒点葱花和切碎的红辣椒点缀即可。如果你喜欢茄子和肉臊味道更融合的话,可以再入烤箱烤几分钟或微波炉转两分钟。

1. Clean and dry the eggplant and make a shallow cut along the length of the eggplant,rub or spray a layer of cooking oil over the eggplant.

2. Place the eggplant in microwave, cook on high for 5 minutes, if you can find a microwavable cover to cover it, the color of the eggplant will stay purple and won't turn brown..

3.  When the eggplant is ready, use the back of a small spoon to gently spread the eggplant out to form a shape of a bowl, the eggplant will be very soft and tender now, so this step should be very easy.

4. Place about 3-4 tbsp of Minced Meat Sauce with 2-3 tbsp of water in a cooking pan, if you like it spicy, you can add 1 tbsp of Homemade Chili Oil to the meat sauce, cook until the gravy thickened.

5. Spread the minced meat sauce over the eggplant, sprinkled some minced scallion/chili for decoration.
