Pineapple Kesari 【硬麦凤梨甜点】

多年前在吉隆坡工作的时候每个星期五会到公司附近的一家印度素食餐厅吃香蕉叶饭,饭后餐厅会提供一个甜点,有时是米饭布丁,有时是面条布丁,有时则是这款硬麦甜点。

前几天去附近的农夫市场买菜时看见凤梨正在打折,买一送一。就买了两个凤梨回家,拿来做一次这个很久没吃的甜点Kesari。

When I was living in the Kuala Lumpur years back, I will often go to an Indian vegetarian restaurant near my office to have banana leaf rice every Friday. The restaurant serves dessert after each meal, the dessert can sometimes be an Indian rice pudding/Kheer, and sometimes this suji dessert/Kesari .

The farmers market near my house was having pineapple on sale few days back when I shopped there. I bought two pineapples with the thought to make this Kesari, a dessert that I haven’t eaten for a long time.


材料:
1 杯 硬麦 (Suji)
1/2 杯 糖
2 大勺 黄油/Butter 
20 颗 腰果
一小把 葡萄干
1/4 只 凤梨
2 杯水
一撮 豆蔻籽
15 根 藏红花

Ingredients:
1 cup hard wheat (Suji)
1/2 cup sugar
2 tablespoons butter/Butter
20 cashews
small handful raisins
1/4 pineapple
2 cups of water
a little cardamom seeds
15 saffron stalks



1. 把凤梨削皮去眼切块,取大约两杯量的凤梨块放到搅拌机里,可以加一点点的绿豆蔻籽。

2. 加两杯水把凤梨搅拌成糊状。

1. Peel the pineapple, remove the eyes, and cut the pineapples into pieces. Place about two cups of pineapple pieces and put them in a blender. You can add a little cardamom seeds if you like.

2. Add 2 cups of water and blend the pineapple into a runny paste.



3. 把硬麦在一口锅里干煸汁稍稍变黄。把腰果烤香备用。

4. 锅里加入两大勺黄油,融化后加入葡萄干稍微炒香。

5. 加入硬麦一起炒一分钟,倒入凤梨糊。煮滚后加糖和藏红花后转中小火,加盖焖煮5分钟。

6. 当硬麦熟了之后,加入烤香的腰果拌匀即可上桌。这款甜点微热的更好吃。

3. Roast the sooji/suji in a pan until it browns slightly. Toast the cashew nuts in oven and set aside.

4. Add two tablespoons of butter to a cooking pot, add raisins and sauté until fragrant.

5. Add the Suji/Sooji and stir-fry for a minute with the raisin and butter, pour the pineapple paste into the pot. 

6. Bring the mixture to a boil, add sugar and saffron strains, turn to medium-low heat, cover with lid and simmer for 5-6 minutes.

7. When the suij is cooked, add the toasted cashew nuts and serve. This dessert is best served warm.
