【黄豆炖猪蹄】Soybean Trotter Stew

冬天因为家里开暖气的关系皮肤都会变得特别干燥,平时除了抹点润肤剂以外,我还喜欢炖点滋补的汤喝喝,也是不想吃太多碳水时很好的选择。 

猪蹄不想红烧的时候拿来炖黄豆也很美味,冬日里来一碗,吃完暖暖的很舒服。

Pork Trotter and soybean are both believed to be good in winter, a stew made from the two should keep you warm and hydrated at the same time. 

It is often my go to when I am on low carb mood.

材料:
600 克 猪蹄
1/2 杯 / 100 克 干黄豆
2-3根 青葱
4-5 片姜片
1 只八角
1/4 杯 料酒
盐适量

Ingredients:
600 g of pig's trotter
1/2 cup / 100 g Dry Soybean
2-3 Scallion/Spring Onion
4-5 slices of ginger root
1 Star Anise
1/4 cup of cooking wine
Salt to taste




1.  把黄豆洗净泡水1晚上,沥干备用。

2.  把猪蹄洗净砍块,毛处理干净后入锅加点料酒煮滚汆烫后洗净。

3. 把猪蹄、姜片、葱段和八角一起入锅加水没过中小火炖一个小时后加入泡好的黄豆,继续炖45分钟至一个小时,加盐调味即可。

1.  Clean and soak the soybeans overnight, wash and drained before use.

2.  In a pot, add the trotters and cooking wine with enough water to cover them, bring the water to boil and blanch for 2 minutes. Transfer the trotters to a colander and rinse under cold water to remove any scum.

3. Place trotters, ginger slices, scallions and star anise in a cooking pot, ( I use crockpot), add enough water that could submerge the trotters, cook at medium low on stove/high on crockpot for one hour.

4. Add the soybean and cook for 1 hour more, season with salt before serving.
