【印尼Balado辣椒酱】Balado (Indonesian red chili paste)

 

几年前我接了一份在费城为期一年的工作,所以经常会在下班时开车到附近的“印尼城”去买印尼超市里的盒饭回家当晚饭。

其中一款我很喜欢的盒饭是Balado炸鸡盒饭,非常辣,非常好吃。我在家也经常做一盒Balado辣酱放冰箱里慢慢吃。

A few years back I was on a one year project in Philadelphia, PA, so I used to visit the "Indonesian Town" near my office in Philly after work to buy packed foods for dinner. One of my favorite packet meals is Balado Ayam, it is spicy and very appetizing.

I sometimes also make this spicy chili paste at home, and keep a box in the fridge to go with my meals.

According to Wikipedia : Balado is a type of hot and spicy bumbu found in Minang cuisine of West Sumatra, Indonesia. It has since spread through the rest of Indonesia and also Malaysia especially in Negeri Sembilan.

材料:
80 克 红辣椒
80 克 朝天椒
2 只 番茄
2 只/ 40 克 红葱头 Shallots
4 瓣/20 克 蒜瓣
1/2 小勺 糖
1.5 小勺 或 适量 食盐
1 大勺 柠檬汁

Ingredients:
80 g of Red Chili
80 g of Thai red chili
2 ripped tomatoes
2/ 40 g  Shallots
4 clove/20 g garlic
1/2 tsp Sugar
1.5 tsp Salt or to taste
1 tbsp Lemon Juice



1. 把材料都清理好切块/切段,

2. 锅里热上3大勺油,把所有材料入锅煸炒至断生。

3. 取出放到捣臼里捣烂,回锅加盐、柠檬汁和糖调味,喜欢油润点的可以再加一点油炒香即可。

此酱可以作为佐料,也可以当肉类/煎蛋/煎鱼沾酱,非常好吃。可以密封冷藏2周左右。

1. Clean and prepared the other ingredients accordingly. Add all of the ingredients in the cooking pan with 3-4 tablespoons of oil and cook for about 5 minutes.

2. Place all cooked ingredients in a mortal and pestle and pound into a coarse paste. You can also use a food processor to do this.

3. Add the paste back to the cooking pan and season with salt,lemon juice and sugar, you can also add a little more oil to cook. 

This Sambal goes well with any meat/egg dishes, the prepared sambal can be stored in a container with lid in the fridge for 2 weeks.

  1. Looks good, thanks for sharing the recipe! I shall try it this weekend and add a few kaffir lime leaves shredded into the sambal for extra kick.
