【果阿咖喱鱼】Goan Fish Curry


果阿是印度的一个海滨城市,也是印度最小的邦。面向阿拉伯海的这个城市有着非常漂亮的沙滩。它曾经被葡萄牙占领过,所以有很多葡萄牙式的建筑物和饮食,许多当地人仍然口操流利的葡萄牙语呢!

海鲜是果阿家常菜里不可或缺的食材,果阿也是印度除了West Bengal和Kerala之外把海鲜当主要食材的州属。

对于来自东南亚的我来说,由于果阿菜的材料和东南亚菜很接近,所以口感和味道也比较容易接受。


Goa is the smallest state located in the South West of India. Its culture is  a mix of east and west due to the Portuguese ruling in the 1500s. The eastern influence is not just in the culture of the state, it also shows its footage in the cuisines. Seafood is the main cooking ingredients there, as well as a major source of protein.


As I grew up eating seafood, Goan dishes was one of the very first Indian dishes that I liked, and still do!



材料:
400-450 克的 三文鱼(或任何鱼类)切块或切片
1/2 小勺 罗望子酱兑半杯水(干的就用大约一寸的干罗望子果肉在半杯热水里泡开)
1/2 只 洋葱
1 只 番茄
3-4 只 辣椒干
3-4 瓣 蒜
1/2 寸 姜
2 小勺 椰丝


调味料:
1 大勺 芫荽粉 (coriander powder)
1 大勺 孜然粉 (cumin powder)
1/4 小勺 姜黄 (turmeric powder)
1/4 小勺 辣椒粉 (red chili powder)
1 大勺 番茄酱 (Ketchup)


Ingredients:
1 lb Salmon  (or any other kind of fish)cubed or slice into 1/2 inch thick
1/2 tsp of tamarind paste (or substitute with 1-2 tbps of lime juice)
1/2 Medium Size Onion
1 Ripe Tomato (Medium)
3-4 Dried Chilli
3-4 cloves of Garlic
1/2 inch of ginger root
2 tsp shredded coconut


Seasoning:
1 tbsp coriander powder
1 tbsp cumin powder
1/4 tsp turmeric powder
1/4 tsp red chilli powder
1 tbsp Ketchup






1. 先把三文鱼洗净处理好,

把姜葱蒜,椰丝,青辣椒,辣椒干和番茄放入搅拌机里搅拌成糊状。我用了干的罗望子,所以先用热水泡发,搓出罗望子汁,过沥冷却后加入搅拌机里和所有的材料一起搅拌成糊状。

3.锅里下2-3大勺的油,倒入搅拌好的材料煮至泛油之后下所有调味料和盐。翻炒3-5分钟,倒入一杯多一点的水,煮滚,然后中火煮至浓稠度适中。

4. 最后小心的把鱼块下锅,加盖焖煮3-5分钟左右,就好了。

1. Clean and cut fish into desire size/pieces.


2. If dried tamarind is used, soak a small ball size of dried tamarind with hot water, when the water temperature cools down, mix the tamarind using fingers to extract the juice, drain and use only the brownish color juice.


3. Grind together ginger, garlic, shredded coconut,chili and tomato with tamarind juice.


4. Add 2-3 tbsp of cooking oil in a cooking pot, pour in ground paste and cook until oil separated at the edge, add all spices listed and salt.


5. Add 1 cup of water into the pot and bring to boil, turn the heat to medium and cook the gravy to desired consistency. This shall take about 8-10 minutes.


6. Add fish pieces and cook for roughly another 3-5 minutes, or until fish pieces are all cooked.


Serve with hot steamy rice!
