【炸香蕉糕】Pisang Goreng (Banana Fritter)



前天看见超市摆着类似马来西亚炸香蕉用的香蕉 (Pisang Raja),忍不住买了一串回来,做马来西亚的小吃炸香蕉。

小时候经常在炎热的午后跟长辈要零用钱,然后跑到小摊子去买一包冷冻的煎蕾冰或者杂雪,再加上一块钱的炸香蕉,就是一个非常享受的下午了。

出国多年,每次回乡都没有机会再尝尝这个小点心。今天天气跟我那遥远的家乡如此相似,就做一个热带风情的点心做下午茶点吧!


Fried banana is a very common snack back home, a sweet childhood memory of mine.

I would ask some money from grandpa during those hot afternoons and ran to the small Malay stall that sells fried banana and Cendul.

I would buy a packet of cold cendul and some fried bananas, walking home slowly and enjoy the hearty snacks.



材料:
5-6 根熟香蕉 (马来西亚一般用Pisang Emas)

面糊:
1/4 杯面粉
1/2 杯粘米粉
2 tsp 白芝麻
1/2 tsp 雪鹼水 或 1/2 tsp 的小蘇打 加到 1/2 杯水裡 (可根据面糊浓度增减一大匙水)
1/4 tsp 盐
1 tsp 糖
1-2 杯 食油 炸糕用
注:如果想味道更香,可以用椰奶或者牛奶代替水调糊。

Ingredients:
5-6 Ripe banana/Plantain  (Make sure it is not overripe)

For the batter:
1/4 cup of all purpose flour
1/2 cup rice flour
2 tsp Sesame
1/4 tsp Baking Soda Added into 1/2 cup of water (+- 1 tbsp)
1 tsp sugar
1/4 tsp salt

Note:If you like it taste better, use milk or coconut milk.





1. 把所有调面糊的材料用打蛋器拌匀,放在冰箱裡静置至少一個小時。
2. 在锅里热上2-3寸的食油。
3. 剥开香蕉,一分為三。沾上面糊,不要太厚了,入油锅中火炸成金黄色就好了。

1. Whisk together all ingredients listed under batter, leave it in refrigerator  for at least 30 minutes. Heat up 2-3 inches of oil in a cooking pan.

2. Peel banana, and slice the banana into 3 equal parts lengthwise.

3. Dip those banana into the batter, fry it in hot oil until golden brown in colour. Drain on a wire rack or paper towel.

Snack from the tropics... mind one?

  1. What type of bananas did you used? I used the regular supermarket Dole bananas and it falls apart when I fried them :(
