Thai Basil Stir Fry Tofu



The Thai Basil I planted this year have been flowering non-stop, so I have no choice but to keep cutting the tip to keep it growing.

That also means to keep using thai basil in my cooking! This time I use my favourite cooking ingredient -- tofu! The tofu I choose for this recipe is the smoked hard tofu, the texture is chewy and somewhat meat-liked, good substitute for meat indeed.


Ingredients:
3-4 hard tofu (slice into long stick)
2 cup thai basil leaves
2-3 thai chilli(or green chilli)
2-3 cloves of garlic (slice)

Seasoning:
1-2 tsp Fish sauce/nam pla (or to taste)
1 tsp Oyster sauce
A pinch of sugar
A pinch of pepper powder (Optional)



Clean and prepare ingredients accordingly.



In a cooking pan, add 1 tbsp of oil, stir fry garlic and chilli till fragrance, add tofu pieces and stir well.

Pour in 1 cup of water or stock, season with oyster sauce, fish sauce and sugar, cover with lid and cook for 5 minutes at medium heat.

When the water reduce to desire thickness (very less gravy), add Thai basil leaves, switch off stove, stir well till basil wilt. Seasoned with some pepper powder before serving.
