【米片土豆】Aloo Poha (Flattened Rice with Potato)



Aloo Poha 是印巴尼泊尔很普遍的早饭。Poha(米片)是把大米压成片方便粗存的一种做法,做的时候稍微泡水发涨,米片很好处理,也很好做,时间短,也容易消化。

所以很适合作为早餐的材料。

Aloo Poha is a well loved breakfast in India, Pakistan and Nepal.

Poha is a type of flattened rice, it is very easy to prepare this type of rice, all you need to do is to wash and briefly soak it with water, it will then swell up, and could be cooked in a very short time. A very good choice for busy morning indeed!


材料:

1 杯 米片

1 只 中型土豆 (削皮切丁)

1/3 杯 烤熟的花生米

1/2 只 洋葱 (切碎)

1 大勺 青豆 optional

1-2 只 青辣椒 (切碎)

1 小勺 鹰嘴豆瓣 (Channa Dal)Optional

1/4 小勺 芥菜籽

3-4 片 咖喱叶

1 大勺 切碎的香菜

1 大勺 Sev (印度零食脆面条)Optional

 

调味:

一点 黄姜粉

一点 辣椒粉 optional

盐 适量 (大约 1/3 tsp)

1 小勺 柠檬/青柠汁


Ingredients:
1 cup Poha (Flattened Rice)
1 Medium Potato (Peel and cut into small cubes)
1/3 cup of roasted peanuts
1/2 Onion (Chopped)
1-2 Green chili(Chopped)
1 tbsp snow peas  optional
1 tsp Channa Dal Optional
1/4 tsp Mustard Seed
3-4 Curry leaves
1 tbsp Chopped Coriander leaves
1 tbsp Sev Optional

Seasoning:
1 tsp Lime/Lemon Juice
A pinch Turmeric Powder
A pinch of chili powder optional
Salt to taste (around 1/3 tsp)





1.  米片,在印巴超市,越南超市都买得到。

2. 锅里先下 2 大匙油,把鹰嘴豆瓣和芥菜籽爆香,加入咖喱叶,香味出来之后,加入切碎的洋葱和辣椒煸炒至洋葱变透明,加入切丁的土豆,翻炒均匀。

3. 加入盐,姜黄和辣椒粉,翻炒均匀,中火加盖稍微焖3-5分钟让土豆变软。

4. 把米片用水冲洗,看见米片开始发涨就好了。

5. 倒入米片翻炒均匀,断生之后加入香菜翻匀就好了。(注:如果用青豆这个时候可以加入

6. 吃的时候挤入一点柠檬汁,加上一把花生米,一把脆面条。

2. In a cooking pan, add 2 tbsp of oil, Channa dal and mustard seeds, when it starts sputtering, add curry leaves, when it fragrant, add chopped onion and chili and stir till onion become translucent.

3. Add cubed potato, stir well.

4. Season with salt, turmeric powder, chili powder, stir well, turn to medium heat, cover with lid and let it cook for 3-5 minutes or until potato becomes soft.

5. Wash and briefly soak the Poha, for like 45 seconds, stir in the washed Poha, quickly stir well, and cook for another 2-3 minutes, add snow pea if used, and coriander leaves.

6. Squeeze in some lime/lemon juice, sprinkle some roasted peanut and sev.
