Lobia Masala(Black Eye Bean in Spicy Curry) 【炖眉豆】


As a Chinese I grow up eating Black eye bean as dessert or snacks.

I learnt about nutrient value and different ways of preparing this beautiful little legume's when I was in India.

I now prepared this Spicy Curry pretty often at home, it goes well with flat bread and jeera rice.

我们闽南人很喜欢吃眉豆,做糕点,煲汤,裹粽,都爱用点眉豆,闽南有名的豆签就是眉豆粉做的,特别营养好味。

印度人也爱吃眉豆,但是他们是加香料炖了吃,配面饼或米饭吃都特别香,净吃也可口呢!

【眉豆的营养成分相当丰富,包括蛋白质脂肪糖类、 及食物纤维、维A原、维生素B1、维生素B2、维C和氰甙、酪氨酸酶等,眉豆衣的B族维生素含量特别丰富。

此外,还有磷脂、蔗糖、葡萄糖。另外眉豆中还含有血球凝集素,这是一种蛋白质类物质,可增加脱氧核糖核酸和核糖核酸的合成,抑制免疫反应和白细胞与淋巴细胞的移动,故能激活肿瘤病人的淋巴细胞产生淋巴毒素,对肌体细胞有非特异性的伤害作用,故有显著的消退肿瘤的作用。

肿瘤患者宜常吃眉豆,有一定的辅助食疗功效。眉豆气清香而不串,性温和而色微黄,与脾性最合。】



Ingredients:
1/2 cup  Black Eye bean (Soaked and washed)
1/2 Bombay Onion
2 Medium size Tomato
1 cinnamon stick, about 2 inches
2 Bay leaves
2 Green Chilies


Seasoning:
1 tsp Coriander Powder
1 tsp Chili Powder
1/4 tsp Turmeric Powder
1 pinch of Asafoetida/Hing
1/4 tsp Garam Masala
Salt to taste

材料:
1/2 杯 眉豆 (泡水3个小时,洗净备用)
1/2 只 洋葱
2 只 中型番茄
1 段 桂皮
2 片 桂叶
2 只 青辣椒

调味:
1 小勺 芫荽粉 (Coriander Powder)
1 小勺 辣椒粉 (Chili Powder)
1/4 小勺 黄姜粉 (Turmeric Powder)
1 撮 阿魏胶 (Asafoetida/Hing)
1/4 小勺 Garam Masala
盐 适量


1. Pressure cook the soaked and washed black eye bean with 4 cups of water and some salt for about 8-10 minutes. Let the pressure release naturally.

2. Blend together onion, tomato and chili.

3. In a cooking pan, heat up 1-2 tbsp of oil, add in bay leaves, cinnamon stick and Asafoetida, stir till fragrance.

4. Add the blended onion and tomato paste, cook until oil separated at the edge. Add all the powdered spices but keep Garam Masala.

5. Add cooked black eye beans with its broth, bring to boil and turn the heat to medium low and cook for another 20-25 minutes. Add the Garam Masala in between.

Serve hot with some chapatis or rice.

1. 眉豆先洗净泡水3-4小时。之后用一口高压锅把眉豆和3杯清水和一点食盐倒入,煮8-10分钟后自然放气,备用

2. 把洋葱,番茄和辣椒搅拌成糊状。

3. 在另外一口锅里,下大约1-2大匙的油,把桂叶,桂皮和阿魏胶下锅稍微翻炒,然后把洋葱番茄辣椒糊倒入翻炒至边上泛油后加入除了Garam Masala之外所有的调味料。

4. 再翻炒差不多1分钟后,把刚刚煮好的眉豆倒入,加一杯水,煮滚后中小火炖20-25分钟。

    1. Hi Soh, welcome to my blog! You should be able to get them both in Indian supermarket.
      If not, try online. You can omit asafoetida if you really can't find it.
