Pig's Tail Black Bean Soup

Mum used to make this black bean soup at home, and all of us love the pig tail in it.. as it was well cooked and very soft... According to Chinese herbs and medicines, this soup is particularly good for men, on what? If you ask..

The answer is, please use your imagination!

3-4 Pig Tails (Chopped into 2 inches pieces)
300 gms Black Bean
7-8 Chinese red/black dates
20-30 Dried wolfberries (Optional)
Salt to taste,

Soaked black beans for 2-3 hours, drained and wash thoroughly. Chopped the pig tails into pieces.

Scald the pig tail, put the pig's tail in boiling water for about 45 second, drain, and wash it thoroughly with cold water, set aside.

In a clay pot, pour in 10 cups of water, black bean and dates,  bring it to boil and turn the heat to medium and cook for 1 hour, now add the pig's tail pieces, and cook for another 2 hours, till the pig's tail become soft. Add salt to taste.

This soup helps to prevent osteoprosis too!
