【印度王后炖豆】Dal Maharani


这道“王后炖豆” 名字其实有点哗众取宠,它是相对印度另外一款很有名的炖菜“奶香炖杂豆Dal Makhni”而言取的名字。

一般Makhni奶油炖菜被认为是皇家美食,食材比较朵,是属于王者的美食。而这款很类似,但是材料内容有点不一样的豆子菜,为了识别它的不一样,就被命名为王后的炖菜啦!

Dal Maharani is a close relative to another famous Indian lentil stew "Dal Makhni". Generally speaking, Makhni stew is considered a royal delicacy, and is often served at festive or celebrations time. 

Dal Maharani literally means "The queen's lentil stew", it is probably named as such in comparison to the famous Dal Makhani, though very similar, Dal Maharani has its own distinct flavor and is simpler in terms of ingredients and preparation.

材料:
1 杯 小黑豆 (Urad Dal/Black Lentils)
1/3 杯 大红豆 (Rajma/kidney beans)
1/3 杯 眉豆 (Lobia/Black-eyed Peas)
2 杯 番茄糊 (Tomato paste/puree)或 4 只熟透的中型番茄搅拌成糊
2-3 只 青辣椒
1 小勺 姜蒜蓉
1/8 小勺 阿魏胶
1/2 小勺 葫芦巴籽 (Fenugreek seeds)
3 大勺 酥油 (Ghee)
1/4 杯/半条 的黄油
1/3 杯 half & half 或奶油/heavy cream
一根 桂皮
两片 桂叶

调味:
1/2 小勺 印度五香粉 Garam Masala 
1 小勺 辣椒粉 (chili powder)
1 小勺 黄姜粉
1 1/2 - 2 小勺 或适量 盐 

Ingredients:
1 cup Urad Dal/Black Lentils
1/3 cup Rajma/kidney beans
1/3 cup Lobia/Black-eyed Peas
2 cup Tomato paste/puree or blend 3-4 ripe tomatoes into puree
2-3 green chilies
1/8 tsp of Asafetida
1 tsp ginger garlic paste
3 tbsp ghee/oil
1/4 cup or half stick Butter
1/3 cup half & half (or heavy cream)
1 stick of cinnamon
2 bay leaves

Seasoning:
1/2 tsp Garam Masala
1 tsp Chili powder
1 tsp turmeric powder
1 1/2 - 2 tsp salt(or to taste)




1.先把豆子洗净泡水一个晚上,第二天洗净豆子沥干备用。

2. 把4只熟透的番茄和青辣椒搅拌成糊状。

3. 在另外一口深锅里,加入 3大勺的酥油 ghee或者油,把阿魏胶,桂皮和桂叶炒香。

4. 把搅拌好的番茄糊倒入锅里煮至边上泛油,加入所有调味料拌匀,翻炒3-5分钟后把豆子倒入翻炒5-6分钟,加入5大杯水

5. 把豆子转入慢炖锅里炖4-5个小时,或炉子上用大锅先煮滚后小火炖2-3个小时。

吃之前可以加入一些奶油增加香气。

1. Clean the lentils and soak in water overnight, clean the lentils the next day and drain, set aside for later use.

2. Blend 4 ripe tomatoes and green chilies into a paste.

3. Heat 3 tablespoons of ghee or oil in a pan, sauté the asafetida, cinnamon stick and bay leaves until fragrant.

4. Pour the tomato paste into the pan and cook until oily releases on the side, add all the seasonings and mix well, cook for 3-5 minutes, then add the lentils and cook for 5-6 minutes, add 5 cups of water to the pan.

5. Transfer the lentils to a slow cooker and simmer for 5 hours, or use a large pot on the stove to boil and then simmer for 2-3 hours.

You can add some cream or butter before serving.
