素食好主意 【印度烤奶豆腐串】Oven Baked Tandoori Paneer Tikka


我之前上过印度碳炉烤鸡的食谱。是一款用香料和酸乳酪腌过后在一种直立式圆形烤炉里烤制而成的。这种烤炉也是烤制印度馕的炉子,火力很强,烤出来的食物外酥内嫩,非常好吃。

相同的腌料可以腌制奶豆腐做成素的烤奶豆腐串,味道也特别棒呢!

I made a very yummy Oven Baked Tandoori Chicken couple of weeks ago, with the same marinate I also made these Tandoori Paneer Tikka, these tandoori duos are such a good starter for a party and taste absolutely yummy!


腌料:
1 杯 原味无糖酸乳酪/ Yogurt
1 小勺 芫荽粉 (Coriander Powder)
1 小勺 辣椒粉 (Chili Powder)  可以根据口味减少
1 小勺 Tandoori Masala
1 小勺 姜蒜蓉 
1 小勺 红糟  或 两滴色素
1/2 小勺 孜然粉 (Cummin Powder)
1/2 小勺 Garam Masala
2 小勺 盐  或 适量

Ingredients:
300 gm of Paneer (Indian Cottage Cheese) cut into 1 x 1.5 inch cubes
1 red pepper  dice into 1 x 1.5 inch pieces
1 yellow pepper dice into  1 x 1.5 inch pieces
1 zucchini dice into 1 x 1.5 inch pieces
1 tsp of Chaat masala   Optional

Marination:
1 cup Natural Yogurt
1 tsp Coriander Powder
1 tsp Chili Powder or to taste
1 tsp Tandoori Masala
1 tsp Ginger Garlic Paste
1 tsp Ang Chow (Chinese Red Vinasse)  or two drops of red coloring
1/2 tsp Cumin Powder
1/2 tsp Garam Masala
2 tsp salt or to taste



1. 把腌料用个打蛋器混合,加入奶豆腐腌1个小时。

2. 一把牙签或者竹签泡水2-3 小时,然后把腌制好的奶豆腐和蔬菜用竹签/牙签交替串好。

3. 烤箱预热至375 F (190 C), 把一个烤盘喷或抹上一层油,豆腐串摆在烤盘上,入烤箱烤8-10分钟。 然后把烤箱转成Broil,豆腐串翻面,继续broil5-8分钟或上色。

吃之前可以撒点chaat masala和挤上一点柠檬/青柠汁。

1. Mix together all ingredients under for marinate, add the paneer cubes and marinate it for at 1 hour. 

2. Soaked a bunch of bamboo skewers/tooth picks in water for 2-3 hours. Arrange the paneer pepper and zucchini on skewers.


3. Preheat oven to 375 F (190 C), place the skewers on a baking sheet with foil paper that sprayed/brushed with a layer of oil. Bake for 8-10 minutes.

3. Turn the skewers and switch oven to Broil continue to broil for 5-8 minutes or until the paneer slightly charred.

Sprinkle some chaat masala and squeeze some lemon/lime juice on the paneer tikka before serving!
