才稍微回暖了几天,这两天天气又变冷了。这种天气就想来一碗热热的汤,就做了这款酸辣汤。真是暖心又暖胃呢!
The weather was a little warmer for a few days, and turned freezing cold again in the past two days.
A bowl of hot soup feels so right in this kind of weather. So I made this hot and sour soup for lunch, it really warms the heart and stomach!
1 根 火腿肠/ 一小片火腿 (切丁)
1/2 块 老豆腐 (切丝)
4-5 朵 云耳 (泡发切丝)
1/2 根 胡萝卜 (切丝)
1 把 蟹味菇/金针菇 (切段)
1 只 番茄 (切丁)
1 小勺 蒜末
1 只 鸡蛋 (打散)
2 大勺 淀粉
调味:
2-3 大勺 黑醋 (可以根据口味调整)
1.5 小勺 白胡椒粉
2 大勺 酱油
1 小勺 老抽
1 hotdog sausage/a small piece of ham (diced)
1/2 piece of firm tofu (shredded)
4-5 wood ears (soaked and shredded)
1/2 carrot (shredded)
1 handful of Shimeji mushrooms/enoki mushrooms (cut into sections)
1 tomato (diced)
1 teaspoon of minced garlic
1 egg (beaten)
2 tablespoons of starch
Seasoning:
2-3 tablespoons of black vinegar (adjust to taste)
1.5 teaspoons of white pepper
2 tablespoons of soy sauce
1 teaspoon of dark soy sauce
1. 把番茄和火腿切丁,豆腐、胡萝卜、木耳切丝。
2. 把木耳豆腐和胡萝卜丝入滚水里汆烫后取出备用。
1. Dice tomatoes and ham, and cut the tofu, carrots, and wood ears into strips.
2. Blanch the wood ears, tofu, and carrot and set aside.
3. 锅里下一点油把蒜末爆香后加入番茄丁煮至番茄变软。
4. 把火腿丁下锅炒炒,注入半锅水(有高汤更好)煮滚。
5. 加入豆腐、木耳、胡萝卜丝和蟹味菇。
6.开始调味,把醋、酱油、老抽和食盐加入煮滚后,加入胡椒粉后拌匀煮滚。
7. 把淀粉加水兑开后,一边搅拌锅里的汤汁一边倒入芡粉水至汤汁慢慢变浓。
8. 把鸡蛋打散,也一边搅拌锅里的汤汁一边慢慢倒入锅内,当蛋花成型即可熄火。
吃的时候撒点葱花或者芫荽更香。
3. Add a little oil to the pan and sauté the minced garlic until fragrant, then add the diced tomatoes and cook until the tomatoes are soft.
4. Add the diced ham to the pan and cook a little, add half a pot of water (preferably broth) and bring to a boil.
5. Add tofu, wood ears, shredded carrots and shimeji mushrooms.
6. Start seasoning the soup. Add vinegar, soy sauce, dark soy sauce and salt and bring to a boil. Add pepper and mix well.
7. Mix the starch with some water, and slowly add the starch water into the soup, stirring constantly until the soup becomes thickens.
8. Beat the eggs and slowly drizzle it into the soup while stirring the soup. Turn the stove off when the egg drops are formed.
Sprinkle some chopped green onions or coriander before serving.
