We both dislike fully riped banana, and there is no better way to make use of it than to bake a hot bread out of these nutritious fruits!
Ingredients:
200 gm Bread flour
100 gm All purpose flour
30 gm skimmed milk powder
30 gm Sugar
5 g salt
4 g active dry yeast
1 egg (lightly beaten, keep aside 1 teaspoon for brushing later)
50 gm Full cream milk
200 gm Mashed banana
2 tbsp Unsalted Butter room temperature
Mashed bananas, add bread flour, all purpose flour, sugar, salt, egg and yeast into bread machine, set it at sweet roll. knead until the dough formed, let it sit for 10 minutes, add in butter, knead till the dough become smooth on the surface. Leave it aside for fermentation.
- Small: 9 x 4 x 4 inches (23 x 10 x 10 cm). Makes a 1.5 pound / 680g loaf (a bread recipe calling for approximately 3 cups / 15 oz / 425g of flour)
First fermentation, when the dough raised to double its size, this is considered done for the first fermentation.
Knead out the air, and divide dough and shape it as you preferred. Keep the shaped bread into oven (Without heating it) for about 15 minutes. When the bread shows sign of raising again, take it out, brush the remaining egg (dilute with 1 tbsp of water).
Preheat oven to 325 F. Bake for 30-35 minutes.
The toast looks funny.... I didn't weigh them.. that is why...

May I know what temperature i need to adjust for this process?
2. if i dun hav bread machine, can i use the normal mixer to mixe the dough?
Do not need to heat up the oven, just leave the dough inside oven with the door closed.
ReplyDeleteI tried many Bread machine recipes and all ended up hard loaves !! I have to steam it before eating them. I will try yours when I have banana. Is it a compulsory ingredients !! I saw your Oatmeal Bread (Toast), is it hard ?? I will try it when I finished all my bread and buns in my freezer !! Thank you for sharing. I love your blog .
ReplyDeleteTo spicehunt, once I came across this subject, she taught us to on our oven to 208.4 ºF / 98 ºC for 2 mins then turn it off !! Place your bread in the oven with a wet cloth to cover the bread for 10-15 mins depends how high you want it to rise !! Remove the bread then turn on your oven to 375ºF/ 190.5 ºC when the oven is reached to the temperature, place your bread in and bake . This is a very good tip for those who stay in cold countries to prove their breads !!
Hi, I wonder how many banana bus you can make with this recipe of 300 gms flour in all. What about the funny shape bread loaves, if we place too much dough to bake a loaf, that loaf of bread will be hard !! Thanks.
