Old Cucumber Soup (老黄瓜汤)




The cucumber mum and I planted this year was not growing well at all. So I decided to let it grow into old cucumber, I love old cucumber soup and never find this old cucumber at the local Asian supermarket here.

This old cucumber soup is said to be good for reducing heat in the body and help prevent dryness in autumn season...


Ingredients:
1 Old Cucumber
5-6 neck bones/pork ribs
5-6  dried scallop/ dried oyster
6-8 red/black dates

Seasoning:
Salt to taste(around 1 tsp)



Clean the old cucumber with brush, halve, and scoop out the seeds and center part of old cucumber. Cut into pieces.

Clean and cook the bones briefly in boiling water, take the bone out and wash with clean water.

In a clean pot add 3/4 pot of water, add dried scallop/oyster and bone pieces, bring to boil, and turn heat to low, cook for 1 hour.

Add old cucumber pieces and dates, cook for another 35-45 minutes, season with salt before serving.
