Avocado Egg Salad Sandwich




We love egg salad sandwich as breakfast or snacks. As much as I love the taste of mayonnaise in the salad. I have been thinking of making a healthier version using Avocado, part of my eating right and losing weight plan.(Well, that deserves a whole new post I figure).

So I finally made this sandwich as we always keep some avocado at home for baby A. The creamy texture of mashed avocado is just perfect for this sandwich! I must say I really liked it! Yumm!

Ingredients:
1/2 ripe Avocado
1 Hard boiled egg
1 tbsp Mayonnaise       Optional
A pinch of salt
A Pinch of black pepper powder

Others:
Crossant/ bread
Sliced Tomato/Lettuce


Mashed the hard boiled egg using a fork, add avocado and mash together, add Mayonnaise, salt and black pepper, mix well and spread on bread with slices of tomato and lettuce.



Yummy breakfast is ready!
