Gold Coin Bak Kwa 金钱肉干



Bak kwa is a type of Chinese savory sweet jerky that traditionally takes the form of thin square slices. It is the Malaysian/Singaporean favorite snack, especially during Chinese New Year or festive season.

Its popularity rises weeks leading to Chinese New Year, many seasonal bakers steps in to grasp the market, many with interesting products that carry well wishes and meanings.

This Gold Coin Bak Kwa is one of the most selling ones. Prosperity galore, just as the name implies! 

肉干是东南亚过年时不可少的年货,年关越接近,卖肉干的摊贩就越多。除了传统的方型肉干外,好多肉干店还推出了各样新产品。

这款金钱肉干尤其受欢迎,它的形状像金币,春节时买来待客或送人都特别喜庆,吃了说不定新的一年里就财源滚滚来啦!




Ingredients:(Make 30-35 gold coins)
250g Minced pork (with some fat)
1 tbsp Fish Sauce (depending on the saltiness you like)
1/2 tsp Ang Chow/ Red Yeast Rice Vinesse 
1 tsp Light Soy Sauce
5 tbsp Sugar
A little oil for spreading or using a bottle of oil spray

材料:(可做 30-35片)
250 克 猪肉末  (6分瘦,4分肥)
1 大勺 鱼露
1/2 小勺 红糟
1 小勺 酱油
5 大勺 糖
一点食油




1. Mixed all the ingredients listed with minced meat using a spatula and stir at one direction to form a sticky paste. Let it sit in the fridge for at least 1 hour to marinate.

2. Grease a small muffins baking tray. Place about 1 tsp of minced meat in the muffin cup, lightly press to flatten the minced meat to about 3 mm in thickness. Repeat to fill all the cups.

5. Place the pan in the oven and broil the meat for 5 minutes, there is no need to preheat oven. Take the meat out with the help of a tong. 

6. Let the cooked meat rest at the side. Meanwhile, work on the subsequent batches. Repeat steps until all the meat are baked/cooked.

7. Place all the "coins" in a cookie sheet, broil at high heat for 2-3 minutes until edges slightly charred. You can also grill the coins over charcoal grill for better flavor.

Note: I find the thickness and the size of this Bakkwa affects the taste and texture of it, 3 mm in thickness while it is raw by far delivers the best taste. I strongly suggest that you stick with it. 


1. 把所有调味料和绞肉拌匀,用个大勺朝一个方向搅上劲,放置一边备用。 

(注:如果用的是市售的红糟,因为已调有咸味,请把生抽和鱼露的用量酌量减少。)

2. 把一个迷你马芬模喷/抹上一层薄薄的油。每个小格放上1小勺的绞肉,用勺子/手指压平肉末。建议厚度大约3毫米厚,这样烤制出来的肉干口感最好。

4. 把烤盘入烤箱Broil/上火高火烤制 5 分钟,取出烤盘把肉干夹出来摆在一个平底烤盘上冷却。此时可进行制作第二批金钱肉干,重复此步骤至所有肉末用完为止。

5. 等所有肉干都烤好时,把肉干再次入烤箱 上火高火档,烤制2-3分钟至边上有碳烤的效果为止,家里如果有炭炉,也可以碳烤进行这个步骤。

    1. That is what I did Mindy, I baked mine in the oven with only upper heat at 280C.
