Chinese New Year Lucky Bag 【福袋】

This lucky bag was made on the first day of Chinese New Year but I didn't had time to post the recipe. 

Since today it is still within the first month of Chinese lunar calender, I take the chance to post this recipe to wish all my readers the happiest and prosperous year of 2019/Year of Pig!


Ingredients:(For 8 Buns)

For Yellow dough:
150 g of all purpose flour
100 g of pumpkin paste
1/2 tsp of sugar
1/2 tsp of yeast
1/2 tsp of oil

For Red dough:
50 g of all purpose flour
10 g of warm water
a little sugar
a little bit of yeast (about 1/8 tsp)
a little oil
a few drops of red food grade coloring

2 cup of red bean paste
A little red food grade coloring


面团: (可做8只福袋)

150 克 中筋面粉
100 克 南瓜泥 (南瓜削皮切块蒸熟压成泥)
1/2小勺 糖
1/2 小勺 酵母
1/2 小勺 食油

50 克 中筋面团
10 克 温水
一点点 红色素/红糟

两杯 豆沙  或 自制蜜豆

1.Peel and cubed pumpkin and steamed until soft, mash the pumpkin using a potato masher to make pumpkin paste. 

2. Weigh 100 g of the paste out and wait until the paste is cool enough to touch, add sugar, yeast, oil and flour and knead to form a dough. The dough should be firm elastic and smooth on the surface.

3. Knead together all ingredients listed until red dough to form an equally stiff dough. Let  both the dough rise to double its size, may take about 1 hour.

1. 把南瓜削皮切块蒸熟后压成泥。

2. 稍微冷却后取100克南瓜泥加入糖、酵母、油和中筋面粉和成一个比较硬的面团。稍等10分钟把面团再次揉成光滑有弹性的面团。

3. 把红色面团部分也和好成光滑有弹性的面团。把两个面团加盖放到温暖处发酵成两倍大,大概需要一个小时左右。

4. Take both the dough out and sprinkle some flour on the counter top, knead the dough/s for another 3-5 minutes. Divide both the dough into 8 equal parts, with a clean cloth. 

5. Take one part of the yellow dough and roll it into a round disc around 6 inches in diameter, try to make it thinner at the edge and thicker in the middle. I pinch the edges of the disc to make it thinner, which will look more like real cloth once wrapped.

6. Place the rolled dough in the middle of palm to form a bowl-like shape, fill the dough with red bean paste fillings using a small spoon, I used around 2 tbsp of fillings.

7. Gather the edge of the disc and pinch the edges together to form a wrapped bag. 

4. 把发好的面团取出撒点面粉揉出空气,揉光滑。把两个面团各分成8个等份,盖上干净的布。

5. 取一只黄色面团擀开成一个边上薄中间厚的六寸左右的圆饼,用手指头把饼边再捏薄,这样布袋的效果会更显著。

6. 把擀好的面饼放到手心成碗装,填入大约2大勺的豆沙。把饼边收起1/3处捏紧成一个钱袋状。

8. Take a small ball of red dough and roll it into a thin rope about 10-12 inches long, thread the red rob around the "neck" of the red bean bag and tie up as you would with the real thread/rope.

9. Repeat the steps to make all the lucky bag buns. Proof the buns for 30 minutes before steaming. 

10. Heat the steamer for 3-5 minutes before placing the buns for steaming for 12 minutes. Wait for 5 minutes after steaming to open the lid of the steamer.

11. You can decorate the buns with a Chinese prosperity words stamp once the buns are cooled enough.

8. 取一只红色面团揉成10-12寸长的条状做钱袋绳子, 把揉好的“红绳‘绕着布袋捏合处缠上打结。

9. 重复所有步骤把布袋包子都做好,二次醒面30分钟。

10. 把蒸笼加水煮滚上汽后把二次发酵好的福袋上笼蒸12分钟, 等五分钟才开盖。

11. 做好的福袋可以用木刻福字印章沾上红色素印上福字装饰。
