Five Spice Peanuts【微波炉版五香花生米】


这款花生是几年前到一位姐姐家做客时吃到的,非常美味。当时就和姐姐要来了做法,后来也在微信群里分享过,好多朋友都喜欢。

这个花生我们家经常做,却每次都忘了拍照记录。今天又做了一批,趁光线还不错,拍几张成品照,写个食谱。食谱是我后来量化记录的,做法简单,每次都成功好吃。

I had this peanut the first time at a friend's place and loved it very much, my friend was kind enough to share her recipe with me, and the recipe has been made multiple times at home.

I had since finalized a version of a recipe that I liked and easy to replicate. The result is always good and very consistent.


材料:
2 杯 / 330 克 脱壳花生
4 杯 水
2 只 八角
1 大勺 花椒
1-2 片 桂叶
5-6 只 辣椒干  (可无)
1 大勺 食盐
1 大勺 辣椒粉 (做香辣口味的加一勺,五项口味的可免)

Ingredients:
2 cup/ 330 g of raw peanuts without shell
4 cup of water
2 Star anise
1 tbsp of Sichuan Pepper corns
1-2 Bay leaves 
5-6 Dried Chilies  (Optional)
1 tbsp of Salt
1 tbsp of Chili flakes (For Spicy version, it is optional)




1. 先把水、所有香料和食盐加入一口锅里煮滚,熄火。倒入洗净的花生加盖泡45-60分钟至入味。

2. 把泡好的花生倒到一个滤盆把香料水过滤掉,滴干水份。

3. 把花生倒到一只大盘里铺开,入微波炉转 5分钟取出拌匀,然后以每次递减一分钟的方式入微波炉烤干花生。1000 瓦的微波炉基本转五次(也就是微波炉里转5-4-3-2-1 分钟,每次取出搅拌匀再入微波炉转 )就好了,烤好的花生冷却装罐密封即可食用。

 注:如果你家的微波炉瓦度比较少,烤完5-4-3-2-1 (15 分钟)后花生还是不够酥脆,可以逐步增加1分钟至花生变酥脆为止。


如果家里没有微波炉,也可以用烤箱或电饼铛把花生烤至酥脆。

1. Place water and all spices and salt in a pot and bring to boil for 3-5 minutes, switch the stove off and add peanuts and submerged in the spice water for 45-60 minutes.

2. Drain and place the peanuts and spices on a large plate, spread it out evenly.

3. Microwave the peanuts for 5 minutes, take it out and turn using a spatula, microwave again for 4 minutes and turn again, repeat with a minute less in microwave time until the peanuts are crunchy. (i.e  5-4-3-2-1 minutes). My microwave is 1000 watt and it normally take only 15 minutes in total to make crunchy peanuts, if your microwave is lesser in wattage, you can add more minutes until desire result is met.

3. Let the peanuts cooled and store in airtight container.

 Note:You can also air-fry or roast the peanuts in airfryer/oven.

  1. How to make garlic flavor peanuts in shell? The garlic flavor peanuts in shell that are sold loose (in bulk) in stores are getting very expensive. The peanuts in shell used are small (not large) type.
