【椰香红豆烤年糕】Baked Adzuki Bean Nian Gao


这款年糕我几乎每个过年都要做一次和朋友聚餐时带去,今年暑假回娘家的时候做了两次给家人吃,他们都很喜欢,弟弟还说是一款吃了就停不下来的点心呢!今早和妈妈视频的时候她提起说想要这个年糕的食谱,想新年的时候做了请朋友们吃。

这款年糕网上食谱很多,我也忘了一开始用的是谁的食谱了,今天记录的是我按自己口味微调了的配方,希望大家会喜欢噢!

This version of Nian Gao is my go-to whenever I have a Chinese New Year gathering here in the States, a dessert that is easy to make and loved by many.

I made this cake for my family back in July during my visit and they loved it so much that I had to make another one before leaving for the States!Mom has been asking for the recipe since my returns, and since Chinese New Year is around the corner, it is about time to make it again and to record the recipe!


材料:
1 包 / 450 克的 糯米粉
1.5 杯/ 350 克 的椰奶 (coconut milk)加 一撮盐搅拌一下
1 杯/ 235 克 水
3 只 鸡蛋
1/2 杯 食油
1-1.5 杯 糖  (按自己喜欢的甜度调整)
1 大勺 泡打粉 (Baking Soda)

另外:
1/2 杯 红豆沙/ 蜜豆


Ingredients:
1 Packet / 450 g Glutinous Rice Flour
1.5 Cup/ 350 g coconut milk  (Add a pinch of salt to it)
1 Cup/ 235 ml of water
3 Large Size Eggs
1/2 Cup of Cooking oil
1-1.5 Cup of sugar   (According to taste)
1 tbsp of Baking Soda

Other:
1/2 Cup of Adzuki Bean Paste





1. 如果家里没有现成的豆沙或蜜豆就先制作豆沙/蜜豆。一杯红豆洗净泡水3个小时后入高压锅加水刚刚没过红豆加盖中火煮至出气后继续高压十分钟后自然出气。

2. 铁锅里加两大勺的猪油 或食油,把煮好的红豆倒入炒干水份后加入3-6 大勺糖调味,可按自己的口味下糖。做好的豆沙冷却备用,也可以多做点冷冻起来,想要做糕点的时候取出回温即可。

If you do not have ready made Adzuki bean paste at home, you can first make the paste by soaking 1 cup of dried adzuki bean for 3 hours, place the soaked beans in pressure cooker, add enough water to just submerging the beans, pressure cook the beans for 10 minutes after the first whistle, let the pressure release naturally.

2. Add 2 tbsp of Lard or cooking oil in a cooking pan,add the cooked adzuki beans and cook until most water evaporated, add 3-6 tbsp of sugar, you can adjust sweetness to the level of your liking. Let the bean paste cooled to room temperature, I liked to make a larger batch and freezes the paste and use as and when I need it.


3. 把糯米粉、鸡蛋、椰奶、水和油用打蛋器调匀备用。烤箱预热至350 F (175 C)。

4. 取一个11 x 7 x 2的长方形烤盘(我用了玻璃烤盘)抹上一层油,把面糊倒一半到烤盘里。

5. 把面糊入烤箱烤5分钟后取出,抹上一层豆沙,把剩下的面糊倒入再入烤箱继续烤30-35分钟至表面变金黄色。冷却切块即可食用。

注:也可以用两个八寸的圆形烤盘制作两盆年糕。把面糊分成四份,豆沙分成两份即可。

3. Place glutinous rice flour, eggs, coconut milk, water and oil in a large mixing bowl, whisk to form a runny batter. Preheat the oven to 350F (175C).

4. Greased an 11 x 7 x 2 rectangular baking tray, pour half of the batter into the tray, place the tray into oven and bake for 5 minutes.

5.  Take the half baked cake out, spread a layer of adzuki bean paste  on the cake and pour the remaining batter over the paste, place the tray in the oven and bake for another 30-35 minutes until golden brown in color.

6. Let cooled and cut into shapes that you like and serve.

Note:You can also make two 8-inches trays by dividing the batter and adzuki beans paste into two equal parts.
