Huat Kueh (发糕)



Today is the ninth day of Chinese New Year,the hokkian normally has to pray to the god of heaven (天公),We normally buy this huat kueh for the prayer, it symbolize prosperity and growth.

I didnt quite like the colouring part of the huat kueh bought, so I found this recipe online using the natural colour from the red rice wine lees. (The remains from making red rice wine).

The house smells so good when I steamed the kueh....


Ingredients:
2 cups Rice flour
1 cup All purpose flour
2 cups Water
1 Cup Sugar
1 tsp Dried yeast
1 tbsp Red rice wine lees
1 tsp Baking Powder

Mix the rice flour, all purpose flour, sugar and dried yeast and water. When it start bubbling, add the red rice wine lees, stir well. Heat up the oven to about 40 degree celcius,switch off the fire, cover the batter with cling film, keep it inside the oven, and wait for the batter to raise to double the size.



The dough is ready, it is pink in colour, and smell so divine!

At the same time, boil some water, and make sure the water is boiling, otherwise the cake will not raise!

Before steaming, lightly stir in 1 tsp of baking powder,it must be stir in before steaming. Pour the batter into muffin cup around 90% full, it has to be 90% full to raise well and open up like a flower shapes.

Note:(The little trick here to make the rice cake raise and break into flower shape, use a clean toothpick, dip into clean cooking oil and lightly draw a cross on the surface of the cake, the cake will break according to the cross drawn.)



Steam the batter for 25 minutes, DO NOT open the lid in between



This is the cake of prosperity,My Huat kueh is ready!
