Dinner Rolls (Water Roux Starter) 汤种餐包

I bought a bread machine recently. 

I have never made bread before, so I decided to start with something easier, which is dinner rolls to pilot test the machine.

I do not have bread flour at home, so my first batch of dinner rolls are made of all purpose flour.




For Water Roux Starter:

20 g All purpose flour 
80 water 


300 g Bread flour/All purpose flour
30g Skimmed milk powder 
50g Sugar 
1/4 tsp Salt 
4 g Active dry yeast 
1 Egg  beaten (keep aside 1 teaspoon for brushing)
100g Water/Milk 
Water Roux Starter (See above)
2 tbsp Unsalted Butter (room temperature) 
Black seasame  Optional


20 克 面粉
80 克 水

300 克 中筋面粉
30 克 奶粉
50 克 白糖 
1/4茶匙 盐
4 克 干酵母 
鸡蛋一只 (打散,只用一半,另一半留着刷面包表面)
100 克 水/牛奶
汤种 (如上)
2 大勺 无盐黄油 (室温)
黑芝麻一把 可无

1. First prepare the water Roux Starter. Stir the water and flour together until no lumps. Place the mixture in microwave and cook at high for 15 seconds. Take out, stir and put it back for another 15 seconds, stir and then microwave it again for another 10 seconds.You now have the water roux starter ready. Let cool.

2. Place all liquid ingredients into the bread machine, which is water Roux Starter, water/milk, egg. Followed by the flour, milk powder, sugar, salt and yeast (Avoid placing yeast and salt together). 

3. Run the bread machine at a sweet bread function, when the machine stop kneading, turn of the machine. Let the dough raised to double its original size.

4. Turn the machine on and add the butter, run the sweet bread function again till it stop kneading. 

5. Take the dough out and punch the air out, divide the dough into 9 equal parts, roll the dough into small balls and place them in a baking pan (brush a thin layer of butter). Cover the doughs with a damped cloth and wait for 15 minutes.

6. Brush a thin layer of egg wash on the dough, sprinkle a few sesame seeds on each. Preheat oven to 350 F/175 C and bake for 20 minutes. Take the bread out immediately and remove from baking pan, let cool over a cooling rack.

1. 先准备汤种,把水和面粉混合搅拌至没有疙瘩之后放入微波炉里高火转15秒,拿出来搅拌一下,再入微波炉转15秒,再拿出来,搅拌匀再转10秒。把已经呈糊状的汤种放一旁冷却(这个步骤很快,因为泽西这几天下了九寸的雪,放在窗边一下子就凉了)。

2. 把汤种、水、鸡蛋、面粉、奶粉、白糖、盐、和酵母依次加入面包机内胆里。启动甜面包程序,搅拌至停止时,关掉电源。

3. 等面团发酵至双倍大时,加入融化的黄油。再次启动甜面包 程序,搅拌至停止。扣出面团,揉出空气后分割出等份9个小面团。

4.把面团摆到抹上一层黄油的烤盘里。盖上干净的布,我放到预热至170 F/75 C 然后关掉的电源的烤箱里。

5. 面团蓬发差不多想要的面包大小的八成左右时,取出刷上鸡蛋液(可以在鸡蛋液里加上一茶匙的水再刷),撒上一点黑芝麻。
烤箱预热至 350 F度/175 C,烤20分钟,或至上色。
