Dinner Rolls (Water Roux Starter)



I bought a bread machine recently, and I have never make any bread before, so I decided to start with the easiest... which is dinner roll, just to get a gist of bread making, and to pilot test the machine...I do not have bread flour at home, so my first dinner rolls are made from all purpose flour..

Water Roux Starter:

All purpose flour 20g, water 80g,stir well till all flour dissolves in water, microwave the batter for 15 seconds, take it out, stir well, and microwave it again for another 15 seconds, stir it again, and then microwave it again for 10 seconds, the batter should be glu like by now, and we are done.

keep it in fridge until it is completely cold.



Dough:
All purpose flour 300g
Skimmed milk powder 30g
Sugar 50g,
Salt 1/4 tsp
Active dry yeast 4 g
Egg 1, beaten, keep aside 1 teaspoon for brushing
Water 100g
Water Roux Starter
Unsalted Butter (room temperature) 2 tbsps
Black seasame (Optional)

First add all the liquid into the bread machine, Water Roux Starter, water, egg, then the flour, milk powder, sugar, salt and yeast (DO NOT put yeast and salt together).

Run it at sweet till the machine stop kneading, switch off the machine, then add the butter, restart the machine at sweet again, till it stop kneading. Switch off the machine and let the dough raise to double its size.



When the dough raised to double its size, take it out, knead out the air (spread a few drops of olive oil at palm to work on the dough), then divide the dough to 6 equal parts, and then place it in a baking pan (brush a thin layer of butter)

Cover with a damped cloth. Wait for 15 minutes.



Brush a thin layer of egg on top of the pre-bake bread, sprinkle a few sesame..



Preheat oven to 350 F,bake for 20 minutes.



See the texture..



It could be better... am going to try other recipe, and change the kneading time abit...
