Whole wheat Wheat Germ Bread
This Whole wheat wheat germ bread though not so soft like white bread, has it own charm, it smells so good, and has very high fibre and nutrients!
Bread flour 100 gms
multigrain mixed flour 100gms
Wheat germ 20 gms
Whole wheat flour 40 gms
All purpose flour 30 gms
Skimmed milk powder 30 gms
Salt 1/4 tsp
Active dry yeast 6 g
1 egg (beaten, keep a teaspoon aside for brushing）
Whole milk 100g
Water Roux Starter 85 gms
Unsalted Butter room temperature 2 tbsps
First place all ingredients beside butter into bread machine, knead at wholewheat procedures till the dough is elastic. The add butter, knead again for about 10 minutes.
Leave the dough inside bread machinese with lid cover, let it raise for 1 hour. When the dough raised to double its size, take it out, knead out the air, and shape it into whatever shape you fancy.
Brush a thin layer of egg on top of bread dough, put the dough in oven (without heating it up) for another 30 minutes for further fermentation.
Take out the dough, preheat the oven to 320F，then bake the loaf at little lower than middle range of oven, bake for 35 minutes, and take the loaf out 10 minutes after it is done baking for better result.
