Tomato Rice (Thakkali Sadam)

I finally harvest the tomatoes in my garden, it tasted so good, so I made some tomato rice.

1 cup Basmati rice, cooked, and let cold
1 large ripe tomato, chopped or grind
1 green chili, chopped
1/2 onion, chopped
1 tbsp of Yellow split pea
1 tbsp of Urad dal
1/2 tsp of shredded ginger
Salt to taste
a pinch of asafoetida
Chili powder 1 tsp
Coriander powder 2 tsp
Cummin powder 1 tsp
Turmeric powder 1/2 tsp
Mustard seed 1/2 tsp
Garam Masala 1 tsp
Coriander leaves, a bunch, chopped

In a cooking utensil, pour in 2tbsps oil,add a pinch of Asafoetida,mustard seed,add a few dried chilies if needed, stir a bit, add Urad dal and Yellow split bean.

Now add chopped onion, chilies and tomato, stir for about 2 minutes, now add all the spices and salt. Stir well,add the cooked rice, stir fried it well, around 3-4 minutes.

Sprinkle some chopped coriander before serving.
