Saffron is believed to have good medicinal properties since ancient time. The Chinese use it to help women regulating menstruation cycle, improve blood circulation, help remove blood clots/blue black.
It is also important to know that saffron is not advisable to use on pregnant lady and or during menstruation, as it could cause excessive bleeding, and possible miscarriage.
This saffron rice works well as a side dish to go with fish or any seafood, it could be prepared in under 20 minutes!
1 cup Basmati rice
1 3/4 cups chicken/vegetable stock（or water with small piece of stock cube）
1 tbsp fish sauce （or 1/4 tsp salt）
2 tbsp frozen peas
30-35 threads of saffron
1/4 tsp Turmeric Powder
1 tsp Minced garlic
1/2 tsp Lime/lemon juice
A pinch of chili powder optional
All ingredients needed：
Wash and drain rice, in a heavy bottom cookware, boil stock with all ingredients beside rice and frozen peas.
Add rice, first bring to boil, turn the heat to medium low and cover with lid, cook for 10-15 minutes until all liquid evaporated, turn the heat to low and simmer for 5 minutes.
Use a fork to loosen rice, add frozen peas, switch off the stove and cover lid. Let it sit for 5 minutes before serving.
I serve this with a piece of grill fish and some stir fry baby carrots.
