【纸包盐焗鸡】Chicken en papillote (Grill Chicken ina parchment paper)




On weekdays when N goes to office and baby A goes to daycare. I only have to prepare lunch for myself.

This chicken in Parchment paper was my lunch today, using the Chinese Yim Kuk Gai (盐焗鸡)rub, it was really easy and delicious, had it with a bowl of salad and it is very satisfying!

2-3 块 鸡腿/鸡翅
1/3 包 盐焗鸡粉
Parchment Paper 一张 (大约 1 ft x 1 ft)
一点蛋白 (或用面糊代替也可)

2-3 Chicken drumsticks or wings
1/3 Packet of Yim Kuk Gai Rub (I bought mine from Chinese supermarket)
Parchment Paper 1 piece  (1 ft x 1 ft)
Some egg white for brushing/sealing

1. 把油纸对折成三角形,可以把边角修剪掉,成半月形。把鸡肉清理干净,用厨房纸吸干净水份,均匀抹上盐焗鸡粉后,摆到油纸上。

2. 在油纸的边缘刷上一层蛋白,对折粘上后边缘再刷上一层蛋白。像做饺子那样把边缘折好,成半月形,然后摆到冰箱里,让鸡肉在纸包里腌上至少一个小时。

3.一个小时后,烤箱预热至 375 F(190 C), 如烤箱烤 30-35 分钟。然后稍微等 5分钟,剪开纸包,午餐就好啦!

1. Fold the parchment paper into half to form a triangle,trim to heart shape. Place chicken pieces on one side, rub the Yim Kuk Gai rub on chicken.

2. Brush a layer of egg white at the edge of parchment paper, bring the other side and stick them together. Brush another layer of egg white on the edge again, and pleat the edge as you would for pastry/puff. Put the pocket in the fridge and marinate chicken for at least 1 hour.

3.Preheat oven to 375 F(190 C), bake chicken for 30-35 minutes. Wait for 5 minutes before cutting through the parchment paper and serve. (Beware of steam!)
