Chicken en papillote (Grill Chicken in parchment paper)


On weekdays when N goes to office and baby A goes to daycare, I only have to prepare lunch for myself.  At times I will cook once and boxed the remaining for next few meals.

Things change a little after we got our table top convection oven, as it requires less work to preheat and cook, I now like to prepare my meal in the oven.

This chicken in Parchment paper was my lunch today, using the Chinese Yim Kuk Gai (盐焗鸡)rub, it was easy and delicious, had it with a bowl of salad... very satisfying!

2-3 Chicken drumsticks or wings
1/3 Packet of Yim Kuk Gai Rub (I bought mine from Chinese supermarket)
Parchment Paper 1 piece  (1 ft x 1 ft)
Some egg white for brushing/sealing

1. Fold the parchment paper into half to form a triangle. Place chicken pieces on one side, rub the Yim Kuk Gai rub on chicken.

2. Brush a layer of egg white at the edge of parchment paper, bring the other side and stick them together. Brush another layer of egg white on the edge again, and pleat the edge as you would for pastry/puff. Put the pocket in the fridge and marinate chicken for at least 1 hour.

3.Preheat oven to 375 F(190 C), bake chicken for 30-35 minutes. Wait for 5 minutes before cutting through the parchment paper and serve. (Beware of steam!)
