This is the chili sauce I made to go with my Hainanese Chicken Rice and Vegetarian Duck Rice.
8-10 fresh red chilies OR 3-4 large cow horn red chilies
3-4 cloves of garlic
1 thumb size ginger root
2 tbsp of calamansi juice (or substitute with lime juice)
1 tsp salt
1 tsp sugar
Few drops of sesame oil
Just blend everything together in a good processor until a smooth paste form. Let the chili sauce sit for one night before consuming, the taste blended better overnight.
