Chinese Cabbage Rolls【肉末白菜卷】



今年春节做了好些菜,却一直没时间整理食谱和照片。趁这几天比较不忙,把食谱和照片都整理出来。

冬季正是吃大白菜的季节,今天就写个肉末白菜卷的食谱吧!

I made this Chinese Napa Cabbage Rolls for Chinese New Year and has no time to work on the photos and the recipe. 

Since it is winter time and the vegetable that is in season is Napa Cabbage,  it is time to make this yummy healthy cabbage roll!



材料:
200 克 猪肉末
10-12 叶大白菜
一根青葱  切碎
1/4 根红辣椒 (可无)

肉末调味:
1/4 小勺 盐
1/4 小勺 糖
1 大勺 木薯粉/芡粉
1 小勺 酱油(生抽)
1 小勺 鱼露
1 小勺 食油
1/2 小勺 香油
少许胡椒粉

酱汁:
1 大勺 蚝油
1 小勺 酱油
几滴香油
1/2 小勺 芡粉 (加到1/4杯水里混匀)
几颗枸杞 装饰用

Ingredients:
200 g minced turkey (Or pork)
10-12 leaves of Napa Cabbage
1 tbsp of minced scallion
1 tbsp of minced seeded red chili (Optional)

Seasoning:
1/4 tsp salt
1/4 tsp sugar
1 tbsp cornstarch
1 tsp Light soy sauce
1 tsp Fish Sauce/Nam Pla
1 tsp Cooking oil
1/2 tsp Sesame oil
A pinch of pepper powder

For gravy:
1 tbsp Oyster Sauce
1 tsp Soy sauce
Few drops of sesame oil
1/2 tsp of corn starch added to 1/4 cup of water 
few goji berries for garnishing




1. 把猪肉(3肥7瘦)剁成末,把所有调味料加入搅拌匀静置20分钟,稍微腌制。

2. 把大白菜洗净,入滚水里汆烫30-45秒,取出滴干水备用,如果白菜的杆儿比较硬,可以稍微片成薄一点。

3. 把白菜叶摊开,菜杆处摆上一大勺的肉馅,卷起,左右的叶子往内折,再卷起,一个白菜卷就做好了。重复相同的步骤把白菜都卷完。

1. Add all the seasoning to the minced meat, mix well and let it marinate for 20 minutes.

2. Clean and blanch the cabbage leaves for 30-45 seconds to soften the leaves,drain and leave aside, if the stems are a little too hard to roll, slice the stems sideways to make it thinner.

3. Take one leaf of cabbage and lay on the table, place a tablespoon of marinated meat at the lower side of the leaf near the cabbage stem, roll the leaf from the bottom to about 1/3 of the leaf, fold in both the left and right side of the leaf  and roll upward towards the top of the leaf to form a small burrito. Repeat the steps to finish all ingredients.



4. 把白菜卷摆盘摆好,入蒸锅高火蒸15分钟。

5. 取出蒸好的白菜卷,取一口小锅,把白菜盘子里的菜汁倒入锅里,如果菜汁不多,可以稍微加一点水。加入蚝油和酱油,煮滚后加入枸杞,倒入芡粉水(记得搅拌匀)勾芡,把芡汁淋到白菜卷上,滴几滴香油增加香气即可上桌。

4. Place the cabbage rolls on a plate, steam at high for 15 minutes.

5. Take the rolls out from steamer, pour the gravy that is from steaming into a small sauce pan, if the gravy is not much, you can add a little water. Add oyster sauce and soy sauce, bring to boil and add goji berries. 

6. Add the starch water to thicken the gravy, remember to stir the starch water before using as the starch tend to settled at the bottom of bowl fairly fast. Drizzle the gravy over the cabbage rolls. Add a few drops of sesame oil before serving.
