【日式米汉堡】Japanese Rice Burger



多年前日本快餐连锁店摩斯汉堡(MOS burger)进军马来西亚,开业时我和几位同事一起去尝了他们家有名的米汉堡,一吃就爱上了米汉堡的味道。后来摩斯汉堡店选择了离开马来西亚市场,我也再没机会吃上我喜欢的米汉堡了。

前几天我做了日式汉堡肉当晚餐,第二天早上做了我想念的米汉堡当早餐,真是让人分外满足的一份早饭呢!

Years back the Japanese fast food chain MOS burger opened its stores in Malaysia, I went with my colleagues and fell in love with the Rice burger they served. Unfortunately the restaurants didn't do too well in Malaysia and they had to eventually pull all stores out from the market.

I made Japanese Hambugu Steak (ハンバーグ) few days back for dinner, and made this delicious Rice Burger with the remaining burger meat for brunch the next day. 

Just so that you know, This Rice Burger is actually the reason I made the Hambugu Steak! It really did taste like the signature rice burger of the MOS!


材料:

1 杯 日本寿司米
几叶 生菜

汉堡肉材料:
450 克 牛肉末
150 克 猪肉末
200 克 洋葱末
1 只 鸡蛋
35 克 面包屑 或 燕麦
1 大勺 蚝油
1/4 小勺 黑胡椒粉
1 大勺 食油
1 小勺 蒜盐 或 食盐

酱汁:
3 大勺 红酒/葡萄酒
3 大勺 番茄沙司/Ketchup
1 大勺 辣酱油 Worcestershire sauce
1 大勺 蚝油
3 大勺 水

Ingredients:

1 cup of Japanese Sushi Rice
Few leaves of Lettuce

For the patties:
450 g Minced  beef
150 g Minced pork
200 g Minced onion
1 large egg
35 g of Panko OR Oatmeal
1 tbsp oyster sauce
1/4 tsp black pepper powder
1 tbsp oil
1 tsp garlic salt

For the gravy:
3 tbsp Red wine
3 tbsp ketchup
1 tbsp Worcestershire sauce
1 tbsp of oyster sauce
3 tbsp water




1. 把牛肉和猪肉末放到一个大盆里,加入面包屑和所有调味料。

2. 大洋葱一颗,用食物料理机切碎加入肉末里。

3. 戴上手套把肉末和调味料拌匀,静置10分钟。

1. Place minced beef and pork in a large mixing bowl, add panko and all the ingredients listed under patties.

2. Chop a large onion in a food processor until fine, add it to the mixing bowl.

3. Mix all the ingredients together and let the minced meat sit aside for 10 minutes.



4. 把酱汁里列出的所有材料加到一口小锅里中小火煮至浓稠。备用。

5. 取2-3大勺的肉末在手里握成球状后把肉球左右手互抛,把肉球渐渐抛结实,这样做出来的汉堡肉口感更好,煎的时候形状更好看。

6. 把肉球在双掌间压成1.5公分左右的肉饼。中间压出一个凹痕,这样煎的时候不会因为膨胀过度而爆裂。

7. 把肉饼煎/烤至你喜欢的熟度.

4. Mix together all ingredients under gravy, place it in a saucepan and cook at medium low heat until thickened. Leave it aside.

5. Take about 2-3 tablespoonful of the burger meat and make into a solid ball, "bounce' the meatball in both the hands like you would while practicing baseball, this method will help making a meatball that is solid and  will stay in shape during grilling.

6. Lightly press the meatball down to flatten it to a shape of a patty, make a small dent in the middle to help prevent breaking.

7. Grill/cook the hamburger steaks until cooked, you can cook the burger steak to the level of done-ness of your liking.


8. 把寿司米淘洗干净按包装指示用电饭煲煮熟,冷却备用。

9. 把手沾少许水,取60克米饭捏成一个扎实的饭团。

10. 取一个8安士Mason玻璃瓶的活动盖子盖到饭团上压实成一个扁平的圆形饭团。重复把所有米饭整好。

11. 把饭团入平底锅用一点油两面稍微煎一下,表面微微的焦黄即可。

8. Clean and cook the sushi rice according to package instructions. Let cooled.

9. Wet both hands and take 60 g of cooked rice and hold it together to form a solid ball.

10. Take a lid of an 8 Oz Mason jar with two piece loose lids and press the lid as hard as you can onto the rice ball and form a round rice cake/bun. Repeat the steps to make all the rice cakes/buns you need.

11. Shallow fry the rice cakes/buns until both sides slightly brown and a thin layer of crusts are formed.


12. 把汉堡肉煎好,摆到生菜和饭团上,淋上酱汁组装成汉堡即可开吃!一个肯定不够的哦!

12. Assemble the burgers with the rice buns, beef patties and gravy and serve warm!
