【印尼红辣酱蘸茄子】Terung Belado/Balado



这款印尼红辣酱用处非常多,可以拿来做菜调味,也可以作为蘸酱吃。我最喜欢的吃法是蘸烤茄子或煎/煮鸡蛋,非常下饭好吃。

辣酱的做法不复杂,比较麻烦的是找到新鲜的红辣椒,所以每次只要看见红美人椒我都会买一包回来做这个辣椒酱,做好的辣酱可以冷藏好几周。

Sambal Balado is a very versatile chili paste from Indonesia/Malaysia, it can be used as seasoning in many dishes and is a very good condiment for many recipes. My personal favorite ways to serve this chili paste is with grilled egg plant, fried/boiled eggs. All serves really well as side dish to some hot steamed rice.

It is fairly easy to make at home and could be stored in refrigerator for weeks to come.

材料:
2 只 大的红葱头/ 5-6小红葱头
5-6瓣大蒜
80克(4-5只)大红辣椒
5 只 朝天椒(可无)
1 只 罗马 番茄
3-4 大勺 食用油
1 大勺 青柠汁
1小勺 糖
1小勺 盐

其他:
1-2 根 茄子


Ingredients:
2 large/5-6 Small Shallot
5-6 cloves Garlic
80 gram (4-5 pcs) Large Fresh Red Cayenne Chili
5 pcs of Red Thai Chili  Optional
1 Roma Tomato
3-4 tbsp Cooking Oil
1 tbsp of Lime juice
1 tsp Sugar
1 tsp Salt

Other:
1-2 Japanese Eggplants



1. 把材料都洗净切块,锅里热上3-4大勺食油,把切好的材料全倒入煸炒软。

2. 把炒好的食材放到食物料理机里搅拌成酱,不必搅得太细。

3. 把搅拌好的辣酱再次回锅加盐、糖和青柠汁调味煮滚后即可冷却装瓶。可按自己喜好调整味道。

注:不能吃太辣的可用一根美人椒代替朝天椒。

4. 开始做蘸茄子,把茄子洗净对半切开,抹点食油用小烤箱或气炸锅375度(190 C) 烤软,大约需要10-15分钟。或把茄子入微波炉高火转3分钟至变软。

5. 铺点做好的蘸酱在烤熟的茄子上即可上桌。


1. Clean and cut all of the ingredients into large pieces.

2. Heat 3-4 tbsp of oil in a cooking pan, add all the ingredients in and cook until tender.

3. Place the cooked ingredients in a chopper and chop coarsely.

4. Place the chopped chili paste back to the pan and add salt, sugar and lime juice, adjust the seasoning according to your taste. Take the paste out and let cool, store in airtight container.

Note:You can substitute 1 Cayenne pepper with the 5 Thai chilies if you prefer less spicy version of this sambal.

5. To make Terung Belado, halve and rub or spray a thin layer of oil over eggplant, grill the eggplant in oven/air fryer for about 10-15 minutes until tender. Or Microwave the eggplant for 3 minutes at high.

6. Spread some Sambal Balado over the grilled eggplants and serve warm with some steamed rice.
