【福州芋泥】FooChow Or Nee

 


第一次吃芋泥是在马来西亚一家有名的福州餐厅,甜甜糯糯的芋泥是非常好的甜点,吃过让人久久不忘。

去年春节的时候我做了一批芋泥,成品非常好。却一直没机会写食谱,今年春节再做一次,写个食谱记录一下。

I had this Or Nee (taro dessert)the first time at a famous FooChow restaurant in Malaysia many years ago, on my grand father's birthday party. It is sweet and very fragrant, makes it a very good dessert. 

I made a batch of this Or Nee during Chinese New Year last year, and it turned out very good. But I have never had a chance to write a recipe. 

I make the same dessert again this year and decided to write the recipe down.


材料:
600 克  槟榔芋/芋头
30 克/ 一小块 紫薯   可无
150 克 或 适量 猪油
150-250 克 或 适量 白糖 

Ingredients:
600 g taro
30 g / a small piece purple sweet potato optional
150 g  lard
150-250 g sugar



1. 把芋头和紫薯削皮切块(最好戴着手套处理芋头,不然容易手痒)。

2. 处理好的芋头和紫薯入蒸笼蒸25-30分钟至熟、变软。

3. 把蒸熟的紫薯和芋头加1-1.5杯水放到搅拌机里搅拌顺滑。

1. Peel and cut the taro and purple sweet potato into pieces (it is better to wear gloves when handling the taro, it might give you itchiness on hand).

2. Steam taro and purple sweet potato in a steamer for 25-30 minutes until the taro and sweet potato are cooked and tender.

3. Place the sweet potato and taro with 1-1.5 cups of water into a blender and blend until smooth.


4. 把芋泥倒入锅里煮滚后转中小火煮至稍微粘稠后加入猪油继续炒制。全程记得不断翻炒防止粘锅。

5. 等芋泥的体积大约减半,变得更厚重粘稠的时候,加入糖调味。甜度可以按个人喜好增减。

吃之前撒点炒香的芝麻点缀即可。

4. Pour the paste into a cooking pan and bring to a boil, then turn to medium-low heat and cook until slightly thickened. Add lard and continue to stir while it is cooking to prevent sticking to the pan.

5. When the volume of taro paste is reduced by about half and becomes thicker, add sugar and stir until dissolved. The sweetness can be adjusted according to personal preference.

Sprinkle some toasted sesame seeds before serving.
