【妈蜜排骨】Marmite Spare Ribs


朋友Ying姐去欧洲旅游时给我带来一瓶妈蜜(Marmite),妈蜜是一种使用酵母对酿造啤酒时产生的副产品进行二次发酵后生成的一种深褐色的、非常咸的干酱;是欧洲国家如英国所喜爱的酱料之一。

作为英联邦国家之一的马来西亚在饮食习惯上也很受曾经的统治国影响,而妈蜜,则是这段被统治历史的印证之一。这个酱料后来被融入到本地的烹饪方式里二次创作,这款妈蜜鸡就是其中一款啦!

My close friend Sister Ying brought me a bottle of Marmite as a souvenir from her Europe trip. Marmite is a kind of dark brown paste, a side product from beer brewing. It is one of the favorite sauces in European countries such as the United Kingdom.

As one of the British Commonwealth nations, Malaysia also is influenced by the former ruling country in terms of eating habits, and Marmite is one of the influence brought by the British. It was later being used in some of the local dishes and this Marmite Spare Rib is one of them.

材料:
500 克 猪肋排 (剁成 1- 11/2 寸长)
少许烤香的芝麻

腌料:
1 大勺 料酒
1 小勺 酱油
1 小勺 蚝油
1/4 小勺 胡椒粉

调味:
1/2 杯 水
2 大勺 蜂蜜 
1 大勺 酱油
1 小勺 辣酱油 (Worcestershire Sauce)
1 小勺 妈蜜酱 (Marmite)

Ingredients:
500 gm of spare ribs(Chopped into 1- 11/2 inches long)
1 tsp of roasted sesame

For Marinade:
1tbsp of cooking wine
1 tbsp of Soy Sauce
1 tsp Oyster Sauce
1/4 tsp Pepper powder

Seasoning:
1 cup of water
2 tbsp Honey
1 tbsp Light soy sauce
1 tsp Worcestershire Sauce
1 tsp Marmite


1. 排骨剁好之后泡水10分钟,洗干净滴干水份。加入腌料腌制30分钟。

2. 锅里热上两杯食油,把腌好的排骨入锅中火炸至表面变得焦香。取出滴干油。

3. 倒入料酒,水和所有的调味料,大火煮滚后加入排骨转中小火加盖焖煮10分钟或至排骨变软,然后大火收汁即可。

吃的时候撒上一点烤好的芝麻点缀。

1. Chop spare ribs and soaked submerged in water for 10 minute, drain and keep aside.

2. Heat 2 cups of cooking oil in a wok, deep-fry the marinated pork ribs until the surface becomes burnt.

3. Pour in the cooking wine, water and all the ingredient under seasoning, bring to a boil over high heat, add the pork ribs. 

4. Turn to medium-low, cover with lid and simmer for 10 minutes or until the pork ribs become soft, bring the heat to high to thicken the gravy.

Sprinkle with toasted sesame seeds when serving.
