【炒合菜】Stir Fry Mixed Vegetables and Egg



My aunt gave me a pot of Chinese Chive that she grew, the chives have been coming back every year. So every few weeks from the beginning of every spring, I will have a batch of Chinese Chive ready for cooking. 

Today I harvested a batch of the Chinese Chive, and happened to have some bean sprouts at home, so I made this stir-fried vegetables with eggs. It is used as filling for spring rolls in the Northern part of China, I liked it with rice too.

一把 韭菜
一大碗 豆芽
一把 红薯粉/粉丝
3 只 鸡蛋
1 小勺 酱油
1/2 小勺 蚝油
一点 老抽
适量 食盐
一点 胡椒粉

A Bunch of Chinese Chives
a bowl of bean sprouts
A handful of sweet potato vermicelli
3 eggs
1 tsp soy sauce
1/2 tsp oyster sauce
a little dark soy sauce
Salt to taste
a little white pepper powder

1. 先把红薯粉用温水泡软,韭菜和豆芽洗净沥干,韭菜切段备用。

2. 把鸡蛋加一点点盐,一点点料酒和一点胡椒粉打散。锅里热一点油把鸡蛋炒散,取出备用。

3. 锅内再加一点油,把韭菜红薯粉和豆芽一起入锅炒散,加入所有调味料拌匀,加入炒好的鸡蛋拌匀,炒至韭菜和豆芽断生即可。如果有春饼,卷春饼非常好吃。

1. Soak the sweet potato vermicelli in warm water until it is soft, wash and drain the Chinese Chives and bean sprouts, cut the Chinese Chives into an inch in length.

2. Beat the eggs with a little salt, a little cooking wine and a little pepper powder. Heat some oil in the pan to cook the eggs, breaks the eggs into pieces with spatula, take the eggs out and set aside.

3. Add a little more oil to the pan to stir-fry the Chinese Chives, sweet potato vermicelli and bean sprouts, add all the seasonings and mix well before adding the fried eggs. stir-fry at high heat until the Chine Chives and bean sprouts are cooked, serve right away with steamed rice or with flat bread.
